I don’t know who these elitists are who keep insisting we should “just” whip up our own turk’y roasts from scratch on top of the 1,375 things that need to be done to prep for Thanksgiving. But the Gardein one is good and I’m pretty sure they made the TJ’s roast for them.
I so prefer sweet potato pie to pumpkin. Pro tip from a Southern Mama. Individually wrap those sweet potatoes in foil and roast them in the oven until they are super soft. (You can rinse of and recycle the foil with your cans). Once they are cooled, peel them and then procede with your pie recipe. The roasting has the effect of removing extra moisture, but also concentrating and caramelizing the natural sugars. Also much easier than peeling.
I'd highly recommend the tofurkey recipe by From My Bowl, the binder is chickpea flour rather than wheat gluten which I've found much cheaper and it means there's no steaming or resting, just mix it all up in the food processor and then stick it in the oven! It's sooo yummy, I make it every year for the holidays now and you can either fill it with stuffing or have it plain 🥰🥰
heyyy emily love you and all ur vids. just came to let you know that "beat" doesn't only apply to a stand mixer. "beat" in a recipe means to mix them vigorously to combine and incorporate air and it can be done by hand :) hope this helps
also it sounds like your oven is out of calibration. you should get an in-oven thermometer. they are pretty cheap and they help you to know what temp your oven is really running at so you don't have to waste food if it doesn't cook properly
I worked as a baker at a pie shop for a year and if the crust was getting too dark we would just make a crust guard thingie out of foil. It was kind of hard to get it on tight enough without burning yourself but once it was on it worked pretty well.
For a cheese ball: We make 'em every year and yeah it's a wierd-looking ball of squished cheese but if you make it a little spicy and take out those cranberries entirely you can't go wrong. We use Tabasco and do a blend of cheddar/ a softer white cheese/cream cheese.
I got covid and can't see my family for our usual Thanksgiving dinner, so this was fun to watch today even though it's just me and my cats today :) Thanks for the cozy comforting vibes you always share! ❤️
Oh yeah, definitely on board with the sweet potato casserole being better than pie. It's so much easier, too! I don't have any family, so I only just got to start cooking holiday meals when I began dating my boyfriend a few years back. It's just a little dinner for the two of us, but man, still so much of a time sink. It can be fun in its own way if you enjoy cooking (and I do), but I absolutely do not judge anyone doing the store-bought versions. If it saves your sanity and lets you enjoy the holiday with people you love, then it's worth the potentially higher cost as far as I'm concerned. Also, vegan food is growing every day, but the market is still comparatively small, so buying your favorite stuff - especially specialty/holiday - is a good way to show the manufacturers and retail market that there's a demand for those products, thereby encouraging them to make more in quantity, quality, and variety and allow more shelf space. Win win!
@Eva-im3zx idk what powdered sugar you are using, but the standard powdered sugar in a US grocery store contains corn starch. [I'm tried to make this not sound rude and I'm uncertain if I succeeded. It is not my intention]

I make vegan "cheese" spread in my blender out of garlic, almonds or almond meal, nutritional yeast, salt, paprika, and any other seasonings i feel like adding. all of that in a blender with a bit of water to keep things moving. when it's a homogenous paste i form it into a ball and bake it. turns out really creamy and nice.

You should always use dried-out cornbread for stuffing, it's the same concept as bread pudding or french toast... it soaks up the excess liquid and has a dryer end product.
If you use warm water for the flax egg it gets all gel like faster :) I don't have the patience to wait 😂 it hasn't steered me wrong yet in any recipes!!

there are seitan recipes you don't have to steam. I use 86 Eats turkey deli slices recipe on the regular. Takes only 30 mins to toss everything in the food processor, then you bake it for an hour. Super easy and hands off. You are supposed to refrigerate it for a bit but sometimes I just slice straight into it. I think maybe could toss in the freezer for a little to firm faster
Hello, good for you for trying! If you don't finish your Cheese Ball just wrap it up & stick in the fridge. (A quick snack) I love cheese. (Canadian Cheese Head! ❤) Garlic powder would of help it not be so sweet. Good to check all ingredients before starting. Happy cooking!
If you used freshly baked cornbread that’s probably why it was too moist. If you give it a day or two to dry out before using it it would probably help.

Don’t feel bad if you’ve never made your own Tofurkey. I have been vegetarian for 35 years and vegan for several of those and I have enjoyed Tofurkey almost every Thanksgiving, but I have never made my own. I think the reason people think that Tofurkey is not good is because they don’t know how to cook it right. I have a video all about it but let’s just say the marinade you use and the container you bake it in is very important and then it will be so tasty and delicious, even the non-vegans. Love it!
I’ve been a vegetarian/vegan for 19.5 years and I’ve never tried tofurky …although, that may be because I always choose to work on Thanksgiving all day 😂. But I eat tofu and tempeh everyday.
I think your oven is probably running at a temp way higher than it says for that sweet potato pie to have burned like that. An oven thermometer would be a worthwhile investment!

I work at trader joe’s and the system says they discontinued the vegan turkey for 2023 bc they’re developing a better formula for 2024 due to low sales last year but it will be back next year!!!
omg the trader joe's vegan turkey being gone makes me soooo upset. it was literally the best and so not like other tofurkey's. I've made one at home a few times but never like the result idkkk
I made rhe same mistake with the pie crust, youre supposed to prebake it before you put in the filling. I didnt read the directions and my pie was ruined cuz the crust was raw. I bought pumpkins from a local place and roasted them myself to get the flesh and make a homemade filling. Whipped up some whip cream with chocolate and sprinkled reeses pieces on top. Had to make a whole other one and it was delicious but am forever upset about thr pumpkin pie that never was
You have to deal with hot sugar right away and careful not to burn yourself. Pour over cooled pie asap. Your recipe is probally just fine. Nice save though! 😊
i used two 21oz cans of apple pie filling (although I didn’t end up using the whole second can) & then the topping was: 1/3 cup vegan butter (I used Earth Balance) 1/2 cup flour 1/4 cup brown sugar 1/3 cup oats 1 tbsp pumpkin pie spice 1/4 tsp salt

Nuts and/or seeds being solidified in sugar or honey is a nice snack on its own, popular in many cultures. Here where i live we call it kozinaki.

You can sub vegan boursin for the cream cheese to make your cheeseball more flavorful

You need to add more powdered sugar to get the whip cream to whip better. Its the starch that stiffens the cream to hold the air.
There is no starch in powdered sugar tho

If you want raw sweet potato/pumpkin pie, mamey sapote fruit or egg fruit are good substitutes. I'm sure there are more but those 2 came to mind.

Next time, pre bake your pie crust/ shell for about 10 mins or depending on your oven. This will prevent a soggy, uncooked pie crust❤
