GroFit Cooking! - Impossible Beef Tacos

  • Hi y'all! Welcome back to GroFit with Tammy.
    Now it's time to GroFit Cooking!!!
    Today's Recipe is so easy & so delicious, I know your family, whether meat eaters or vegetarians, will enjoy this dish. Do let me know how it goes and change up the beans according to what you all like!
    Recipe time....
    IMPOSSIBLE BEEF TACO MIXTURE:
    - 1 Red or Yellow Onion, finely chopped
    - 4 Cloves Garlic, minced
    - 1 Pack Impossible™ Beef
    - 1 teaspoon Smoked Paprika
    - 1 teaspoon ground Cumin
    - 1/2 teaspoon Oregano
    - 1/2 teaspoon ground Coriander
    - 1/2 teaspoon Chipotle Chile powder
    - Salt & Pepper to taste (approx 1 tsp salt; 1/2 tsp black pepper)
    - 1-2 cans pinto beans, drained (or try black beans, chickpeas, kidney beans...)
    - 1 can chopped or crushed tomatoes, with juices
    Directions:
    1. Warm your pan on Med-High heat. Add in the oil then sauté your onions in EVOO til translucent and golden, about 5 min (don't rush it here!)
    2. Add garlic and saute together 1-2 minutes more.
    3. To the pan add: Impossible Beef.
    Brown, stirring to break down the pieces.
    4. Once this is browned, add in the spices. Give it a good stir.
    5. Then pour in the beans and tomatoes.
    Fill the tomato can 1/2 with water rinse into the pan all that's inside!
    6. Cover & Simmer on low heat for 15-20 min.
    *Adding a little water, as needed.
    To Serve Up the Tacos:
    -use your favorite tortillas or taco shells
    - Toppings: shredded lettuce, diced cherry tomatoes, jalepenos, salsa, olives, chopped cilantro (coriander)
    - Greek yogurt: add salt and pepper - and a squeeze of lime juice, if you have some on hand

    I love how she says she prefers the least amount of preservatives possible and immediately adds salt lol

      Ok… I can take that! 😅☺️ what if I elaborates more and said ‘additives and preservatives not from nature’ -when I studied holistic health the case for pink Himalayan salt or naturally dried sea salts was presented in a favourable light. If a person’s doctor has taken you off salt, please do not let me influence to do otherwise. (I do appreciate the feedback!)

      @@TammyHackman I think it's important not to demonize "chemicals" or "additives", even if they aren't from nature. Nature as a benchmark for health and safety is highly misleading. Don't forget that the point of preservatives is to mitigate the risk of people getting sick from spoiled/tainted food. It's not a bad idea to reduce processed foods, which often require more preservatives, but it's the processed part that's the problem.

      @@000snow000 absolutely agree. Not everyone has access to fresh foods and the finances to afford them as well. If I were choosing between say chips for instance: I would recommend a Garden of Eatin Tortilla chip over Doritos over reason stated above. I appreciate that you are coming from a different angle and I don’t mind your clarifications. Thanks ☺️
