Leek scapes are worth the trouble!

Let your uneaten leeks go another year, it was -9 this winter, yet the leeks survived just fine and now we get to eat these wonderful treats!

They are tough and not great to eat, but they add flavor to our veggie broth or chicken broth, so they have some value. I let one go to seed and the seed sprouted nicely!
