My boss(who owns the biggest clubs in the country in the US, with his brother) constantly raves about breakfast cooks, how he tried one time with his menu and the subsititions KILLED his rockstar A-Team, he always says I was the luckiest cook in the world to work underneith 2 morning diner cooks at a full scale restraunt+pizza(pizza line + full scale grill, fryer pasta etc. GIANT kitchen.) That id never be able to do 6 stations at once iof it wasnt for those guys not being the only people i could watch make a mistake and simulataneously as the messup goes down the drain/trash they have the new one half prepped already within a minute. I enjpoy your videos, you make it look relatively simple, but i know youve seen business not even comparable to your videos, and it shows with how smooth you handle a breakfast rush that normally takes 3-4 cooks ,but mainly they onyl really need you.
Is sausage rolls for breakfast an English thing? I had the exact same job for 13 years. Chef Manager with Elior UK up here in Scotland. It's interesting to see almost exact same system/models being used by different companies. Same hotplate setup. Burger , noodle etc bars. We never did sausage rolls for breakfast tho and now i wish we did 😛

It's a staff canteen, so I believe the food is really subsidized to basically just cover the cost of goods and operating costs
