Got to say I’d get annoyed at the FOH during that breakfast setup I watched. You had literally zero help getting that started. Felt for you. On a real busy day that must get a little overwhelming. Make sure your kind nature isn’t taken advantage of! You are a credit to our industry

All the varity and amount of your dishes is INSANE! There is something for everybody and you also can find something healthy if you look on it. Pouched egg? Wow, there are not many canteens which offer this, also your varity of omlets and everyday something different, it doesnt get boring. I hope there are other canteens chefs who look on your videos for inspirations. Im sure you have no problem making veggy food, you have so many ideas!

Fresh pasta was awesome! There is no way I'd try to pull that off during a service. Pasta, really frustrates me! 😅 What is the dish with pasta(cooked on flat top), sauce, musrooms, chicken??? And bean sprouts? Happy New Year, Mr. T
It’s interesting watching him pulverized those scrambled eggs. One of the first things I was taught in cooking school was to stir the scrambled eggs into soft curds. I wonder how they taste like this.
I never miss a video but you would never see in the States beans and poached eggs, now me I would eat both, by the way are you originally from England.
You should really think about changing your setup. The bin for the eggshells shouldn’t be under the grill, having to constantly bend down to pull it out to discard the eggshells must be tiresome. Placing a container at the side would be better or even a bin with a foot pedal maybe? Just a suggestion. Love your content.

The prices are subsidized by the company that hosts the canteen service. Only their employees eat there.
In America corporations subsidize nothing for their employees. So I hope you guys across the pond enjoy and realize what a benefit that is

Yes, a Rational oven can be used as an oven, steamer, or combi; it is fantastic equipment 👌😊👍

Do you pre-poach the eggs in a warming oven or convection oven before you cook them in the boiling water on the burner?
