You're so right, separating the petals from the sepals takes SO long; the first time I did it, it took me 4 fours to deal with fives cups of the stuff, and the whole time I was telling myself that if the jam comes out good, then I'm gonna be so mad, because I'd have to do this all over again 😆 Though my parents have, I've never tried my own hand at wine or mead, I'm such a jam makin lady, but man does this ever tempt the wine aunt in me

Homebrew store manager here. For years I helped people learn to make beer, wine and the rest. I used to tell people to buy some Klondik ice cream bars and call the neighborhood kids to fill a couple 5gal buckets. It works.
Ever read Ray Bradbury's Dandelion Wine? Great book of short stories, including the called Dandelion Wine. That specifically was autobiographical, a memory of growing up in small town Illinois and collecting dandelion parts with other children for his grandfather to make dandelion wine. You also learn of some of the other uses of dandelion parts.
If they grow in your own yard and you don’t use fertilizer or pesticides then that’s the best bet. Otherwise if there’s a hiking trail near you with a field of them, I doubt those would be sprayed.

my great grandma gave us some homemade dandelion wine and strawberry wine growing up and my mom let me try a little bit of each. legit figured the strawberry wine would be sweeter but it had half the sweetness of the dandelion wine and was so good, even to a teen who thought alcohol was disgusting (i was a goody two-shoes, yes). really surprised by it and always raved about it to people to get them to try it if they ever came across them. dandelion greens are also supposed to be very good too, and nutritious to boot.

Turning it into a syrup before making it into any type of mead or wine would probably be better and bring out the more scuttle notes that dandelion wine is best known for. I was always taught that if you cook the roots with the petals, it'll taste exactly like potatoes with a slightly earthier taste with a hint of seasoning you can never place. But adding sugar can boost the delicious flavors that very few know about that dandelions hold. Hope this helps a bit.
Gonna second what others said about young dandelions, but ALSO, *_where you picked them_* matters a lot. Backyard, roadside, city/suburban dandelions are not recommended to be picked generally. They could be covered in car exhaust, pesticides (even if you’ve never used any and they’re from your yard), animal waste, etc. Also also, every part of the dandelion is edible. It’s all used for different things and have different flavors. For instance the roots can be dried up and ground to be used as a coffee substitute. The leaves are thrown on salads and sandwiches, veggie smoothies, etc. It would be cool to see you try every part of the plant. But another, generally better commonly foraged flower is roses or violets. You can also use rosehips, the tiny fruits as well as the petals. Although violets aren’t native to the US they’re pretty widespread. I would also love to see wood sorrel!! All parts are edible and it has a slightly sweet, citrusy flavor. Super common, too.
