I've seen people complaining about Emirates, but it's really a five star airline a truly international airline with crew from all over the world, English is their language and anyone can feel welcomed.A great service even in economy class.I thinks the Gulf area airlines are way better than European and American airlines.Only Asian airlines like Singapore, Cathay, Korean , Jal and ANA are compatible
I don't know anyone that didnt have a great experience with Emirates. Internet is full of people making opinions about things they clearly dont know... flying cant be better than with Emirates, Qatar Airways, Singapore Airlines... people that say these airlines provide a bad service don't have any clue. That's my opinion. :)
I agree Dubai airport is very spartan/utalitarian on the ground floor. The swish area is the massive BC and FC lounge on the top floor. That's where the magic happens, but even that area can get very crowded despite it's size.
Dubai airport is clearly outdated and behind compared to the top airports worldwide. Doha, Istanbul, Abu Dhabi... all are clearly ahead of Dubai airport. But they are building already a new airport for Dubai that looks is gonna be ahead of all those! :D

Don't forget that aircraft also carry cargo. A light passenger load means less baggage so more space for cargo and (if applicable) could permit heavier cargo to be carried.

They certainly have one of the best economy class meal service, up to about 20 years ago it was a 5 course offering and even better back then.
