Have you ever thought of using celery leaves? I use them all the time in casseroles, soups and fresh in salads and sandwiches etc. I grow it mostly for the leaves which you can freeze , crumbles when frozen. Has more flavour than the stalks itself, love cheese and celery ( leaf) sandwiches)
