You can brown & sear but there’s no need xx

Mushrooms, cauliflower, cabbage, peppers put in half way through though do they don’t go mushy x

would it be a good idea to brown the beef in a frying pan before adding it to the slow cooker ?

There’s no need. Browning meat make no difference to the meats texture at all only the colour & as you can see it looks fine. X
