  • We use this recipe a lot, a very simple plant based sour cream. Such a simple and versatile recipe. Change the measurements a little in any direction and it can be use in place of a mayonnaise too.

    Ingredients:
    1 Package Extra Firm Mori Nu Silken Tofu: amzn.to/4eFTM1R

    1 1/2 Tablespoons Lemon Juice: amzn.to/3N0y7G8
    2 teaspoons Apple Cider Vinegar: amzn.to/3zKZvEO
    1 teaspoon Prepared Mustard: amzn.to/4dlHbQs
    1/2 teaspoon Salt
    1 teaspoon Garlic Powder: amzn.to/4eDVtNg
    1 teaspoon Onion Powder: amzn.to/3ZGkXFI
    1/4 Cup Water (use more or less for desired thickness)

    Yummy, I’ve been looking for a sour cream recipe to mix with steamed spinach and top tofu with the mixture and seasoned panko to bake. Thank you. Sounds perfect.

    Thank you! I make a similar base minus the cashews but adding a half of an avocado with cilantro fresh garlic and lime juice with a pinch of cayenne to make an avocado crema for tacos or burritos, it's fabulous!💚🌱🥑

    I agree with you adding the ACV and the apple cider vinegar along with a mustard. I know people don't like to put a lot of ingredients but they all do something a little bit different to make the taste oh so perfect

      I'll probably tweak it a bit. I have a 850g block of homemade Navy bean tofu that would probably do quite well in this application. No recipe I touch remains untweaked.
      I recently stumbled on Ms. Miwa's vegan tofu mayo recipe. I tweaked it a bit. The main tweak was that I subbed in aquafaba for the oil that her recipe called for. I can make aquafaba more affordably than buying oil.

    I wonder how this could be achieved with fresh/homemade tofu (any level of pressing), given the beaniness of the product

      Not the same at all. You need silken tofu at least but most of those still don't taste neutral enough. Mori Nu works and it's cheap and shelf stable.

    Question. Does it freeze well? I live alone so don't use a lot of sour cream. Cashew ones that I've tried freeze OK. Not perfect, but usable.
    Silken tofu ones, when thawed, are liquid (I assume that the freezing denatures the proteins in a way that's different from the heat treatment needed to make tofu).
    So, did combining cashews with tofu result in something that would be suitable to freeze for when I want fajitas?

      Not sure I would freeze it but we get two weeks easy out of it in the fridge.
