      The same danger that you have with any other moder mandolin, I would like to have the wood block with mine, I think it is a lot less dangerous that the actual protection I have with mine.

      ​@@saraocampo9066 The jiffy one seems alright, though it could use a component to keep the potato down againts the surface too. That should help with the bowing and springiness that leads to uneven thicknesses.

      Cut resistant gloves.

      Such gloves work great against an edge, really great, as in you really will not be cut almost all the time against an edge. The problem is that you can be stabbed. The prong type knives that make the close cuts for the julienne cuts can stab through the gloves. In other words, points of knives go through the mesh. You might have a chance with the chain mail gloves that are really fine because metal doesn't really stretch, but it probably means a little poke rather than a nasty one. I haven't used one of those yet, but trust me, the other ones can get poked very easy.

    After losing the top of my knuckle using a mandolin style cutter, this thumbnail/title combo made me seriously cringe. Haha! I will for ever love the old school restaurant style fry press thats mounted to the wall. No injurys from those and I made 100s of lbs of fries hahaha!
    You are much more brave than I.

    When you brought out that paring knife, I immediately thought of my mom (who cuts EVERYTHING with just a paring knife) who was taught by her grandmother. I also love Clara's channel; it's so comforting to watch her cook.

    Jiffy cutter was from 1950-1959 and the Slick is also from the 50's, but I don't know what range of years.

    I guess that's why those one-armed bandit style cutters became popular, attach to a wall, insert potato, pull down lever, and potato jackpot every time... :P
    (not that mine ever worked like that, first time I tried to use it, the blades popped out of their frame embedded in the still-whole potato!!!)

    Mom had one that looks like one of those can crushers but the end of the compartment was a grid. You put the potato in and in one push of the handle the entire potato was cut into fries.

    As a person who tends to use big words, the fact that you put the definition of petina brought a tear to my eye.       Yes!!! Language is one of those things that doesn't get taught/learned fairly, and we have to normalise not knowing/teaching each other word definitions.
      I used obscure words because I was a home ed bilingual kid without many friends who learned mostly from reading, when I was older I got friends who made me feel really embarrassed and ashamed for using words they didn't know. We would both have been in a better position if we were okay with making language more accessible for each other... And I would have gotten comfortable with slang a lot earlier!

      I'd just like to gently and respectfully encourage a bit more tolerance here. Vocabulary acquisition and spelling are two very different skills and, while they're both inarguably important, the former is far more important than the latter. Plus the whole point of the original comment is that we all have a lot to learn, and that's ok! Making mistakes now and then is an unavoidable (and valuable!) part of that journey.

    These slicers remind me of the tomato slicers we used when I worked at a deli. And yes, you do have to push with conviction, or you end up with tomato sauce. The only time I ever cut myself on it was when I was cleaning the blades and the sponge slipped. Not a big cut, though.

    10:51 You could put the potatoes in the microwave for a minute. I do that before grating them for hash browns or cutting them into fries before I cook them in the air fryer.

      I like to par-boil them myself.
      They do benefit greatly from two-stage cooking.

      @@the_inquisitive_inquisitor When I want to make several at once I wash them and place them on a trivet in my pressure cooker with a small amount of water (1/2 to 1 cup). I pressure cook them for 5 minutes, let them rest for 10 minutes then release any remaining steam. Let them cook and store them, uncovered, in a bowl in the fridge. They are ready to cut up for fries, hash browns, potato salad, etc.

    They probably peeled the potatoes when the Jiffy maker was originally used, which would make it a bit easier to push through. Skin-on fries are a modern preference that I personally do not share!

    Other than cutting myself, the Jiffy one had splinters on the block where it passed through the blades which is concerning to me.

      Wood is not an ideal material for that component.
      It would be -- relatively -- easy to replace with new wood or plastic.

    Yikes! At first, the "Jiffy" looked "iffy", but it worked. Wasn't the "Slick" model intended to cut raw potatoes not cooked?

      The instructions said to "par boil potatoes until half done with skin on" but didn't give exact cooking times. But i would want to try on raw.

      @@happylittlebush9541 Those taters are overdone for this gadget. I used to make fries in a roadhouse, 55 yrs ago. Potatoes that size got 7-8 minutes of boiling. Instructions also say "let cool; peel" cutter works much better on peeled potatoes.

    A mandoline has similar blades. Def recommend the cut resistant gloves! Also easier if you cut in half first so you start with a flat surface. Your second pass is what very pass should be when you start with a flat surface. You stop before you get to the outer surface.

      Few things are likely to cause you as much pain... Although, deep fryers exist...

      My mandolin came with a kevlar glove and I'm thankful it did. It's a wonderful kitchen tool that gives beautiful, even slices and cuts time off of prep but it is a thoroughly dangerous tool. With my glove on, I have thankfully yet to chop off any vital appendages, but I am totally aware of how easily it could happen. Even when I hand wash it, I keep the glove on.

    My mom grew up in the Azores, and what you're describing--cutting into the pot without a board--is exactly what my mom and grandmother did. It used to amaze me watching her dice onions with that method.

    01:25 The Jiffy cutter looks a LOT like the Frenchfry setting on my modern adjustable French mandoline that I bought at my local restaurant supply house. And yes, I wear cut-resistant gloves and use the pusher ANY time I use my mandoline, as I enjoy having my hands intact.

    I have extremely severe arthritis & I'm having a hard time dealing with it right now despite my meds bc I also have a fractured foot & a possibly torn meniscus (I'll find out for sure this Weds at the ortho Dr).
    I took a half a 200mg pineapple CBD/THC gummy last night & rly was not having a good time with it. I'm lucky my husband and sister were here to keep me grounded but I know I was irritating them needing constant reassurance lol.
    Turned your channel on, Emmy & the calming effect began immediately.
    I was calmed almost completely by like the 4th video I watched.
    No more MMJ for me lol.

    I think it's just dulled with age, so it actually is quite dangerous as is, but if sharpened, it should be safer to use.
    Though I will say, there is a modern version of this tool that is safer and easy to use, you can turn a 5 pound bag of potatoes into uncooked fries in about 10 mins with it.
    Edit, I was referring to the first one, didn't know you were going to cover multiple vintage fry makers

    Oh god the anxiety. I wanted to pass you my chain mail gloves I use for the mandoline haha. (Fun fact! The first time the man who became my husband stayed overnight, I snuck downstairs in the morning to make him an omelette before he woke and totally sliced the hell out of myself on a mandoline.)

    If you put a little venigar in the water and salt that you soak them inover night, it helps to prevent them from browning. And you will not taste the vinegar. Unless you put too much.

    I've cut thousands of pounds of potatoes into fries and the thing with the lever that cuts the whole potato at once works best.

    Oh, I can't stand that knife one. I was so nervous watching you test that! The push one seemed ok, but...the wooden pusher is splintering. My family always cut things in their hand over the pot & I did the same until I was slicing a tomato & sliced into my hand. That's when I quit that, & started using a cutting board! Nearly 40 yrs. later, I still have the scar as a reminder to myself & to discourage others from cutting in the hand. But I do LOVE when you test old gadgets. You're awesome Emmy!

    The second one gave me a clue as to how one of my inherited kitchen gadgets was to be used. Imagine someone saw that second gadget and said, "why add your own knife? lets make it all in one!" I had always just assumed it was for julienne carrots or something, but it wasn't great at hard veg, and when it was in my possession, I hadn't heard of shoestring fries yet.

    I was always fascinated by the hand-held crinkle cut tool my mum used when making fries. Eventually I was old enough to get the job! So satisfying somehow. So much nostalgia wrapped up in food. ❤

    I spent about a half hour every day after school cutting French fries on a jiffy cutter just like that one for my parent's restaurant, The Chicken Nest, on Pico Blvd in Santa Monica in the mid 1950s. I started when i was 8 years old. I never cut myself. If you have the patent number you can look up the year it was first patented.

    I think back then you knew the kitchen could be a dangerous place. So I think people were more cautious than we are today. We know all the safety features built into things we don’t think about them. Back then you knew you had to be careful

    You are supposed to cut planks that fit into the cutter bfore you push the potato through. At least it worked better for me that way. BTY I'm 78 yrs old.

      After using it, I think the wooden block is pretty important to its effectiveness, so try to get one with a block.

    that second one shows way back when they would give you a patent for anything. my first thought was in the drawing it shows holding the potato and cut toward you which any one knows is a no no the first one look pretty legit until you lose or break the wood part.

    I could be wrong, but I think the jiffy cutter is meant to hook over the edge of your table with that back tab of metal so you have better leverage for pushing the potato through the cutter.

    3:44 I took a chunk out of my finger about a year ago with a mandolin, and I've still got a very visible and prominent scar. The urgent care nurse told us that they see mandolin injuries several times a day.

    My mom cuts with a knife like that, in the palm toward herself. So I learned the same way. Fully knowing it’s not the safest (but most times it’s the quickest). My grandma was born in the 20s, so the depression era checks out, cause that’s when she would’ve been learning to cook.

    I’m so clumsy, I’ve nicked the top of my thumb and fingernails with regular kitchen knives. I think I’d probably lose a finger on the jiffy. 😂

    The biggest issue with those old gadgets is that you often have to push with a lot of force, and if your hand (or the potato) suddenly slips, you're now driving your flesh into a sharp edge very forcefully, with no time to react, resulting in a very bad injury. My grandmother had an ancient potato grater that was nothing more than a wire mesh screen. You had to push so hard to get the potato to go through the screen, it resulted in skinned (grated) knuckles every time. We would (ruefully) joke about how much "protein" was going into the potatoes.

    I learned the "hand cutting" from my Mom. it's a quick way to chop smaller soft stuff just-in-time. I mostly cut fruit into my porridge that way.
    ...and as soon as you know your knife and ingredient, it feels way less sketchy than it looks. unless it's fresh off a waterstone the blade shouldn't be able to cut your skin before pushing the skin in a few millimeters. that cushioning and the close-quarters control and leverage makes the method quite safe. I mean as long as you don't try to cut a whole pumpkin that way...
    most impressive feat I've seen was a buddy's granny hugging a loaf of bread and cut it to near perfect slices with a knife half it's thickness

    Just a tip, my grandma uses one of these to this day, you’re supposed to pre slice the potatoes in half before using! That’s why it got easier per se when you got it really flattened out.

    I really enjoy these vintage gadgets videos. A couple days ago, I was at Value Village AKA Savers in the US and they had a brand new commercial French fry cutter. I picked it up for CDN $16.00 which is about USD $2.00. I had to buy at that price cause I didn't want to lose any money. : - )

    As a kid we would have used that jiffy potato cutter until the wheels fell off! Would I let my kids use it? Heck no😂! Definitely a trip to the emergency room 😳😁!

    My mom uses a potato cutter from the 80s, which came with different squares slicer to make different styles of french fries. It's was cool but didn't use much because of the store bought french fries.
