Old Fashioned Homemade Eggnog

  • Decadent, thick Old Fashioned Homemade Eggnog is quite easy to make and cooked for food safety. Whisk up a batch of this favorite Christmas drink that is way better than store bought!

    ✅Ingredients
    • 2 ½ cups milk
    • 4 whole cinnamon sticks
    • ⅛ teaspoon ground cloves
    • ½ teaspoon vanilla extract
    • 7 egg yolks
    • ¾ cup white sugar
    • 2 cups heavy cream, or half and half for a light version
    • 2 teaspoons vanilla extract
    • ⅛ teaspoon ground nutmeg
    ✅Instructions
    1️⃣ Put the milk, cinnamon sticks, cloves, and 1/2 tsp vanilla into a large saucepan. Put it over the lowest heat setting on your stove for 5 minutes.
    2️⃣ In a separate bowl, whisk together the egg yolks and sugar for 1 minute.
    3️⃣ Turn the heat under the milk up to medium-high heat. Remove the cinnamon sticks.
    4️⃣ Slowly whisk in about 1/4 of the hot milk into the egg/sugar mixture. Then pour all of the egg/sugar mixture back into the saucepan and whisk it all together. Put it over medium heat, whisking constantly, for 3 minutes. It will thicken a bit.
    5️⃣ Pour the hot eggnog into a large bowl or beverage container and let cool at room temperature for 1 hour. Add cinnamon sticks back in (optional).
    6️⃣ After 1 hour, stir in the heavy cream, 2 teaspoons vanilla, and nutmeg. Store in the fridge and allow to cool for at least 4 hours before serving.

    Hi, going to make this egg nog. I made your homemade cranberry sauce for Thanksgiving, adding orange juice and spices, and it turned out great. My daughter loved it and gave most of it to her with a block of cream cheese saying the sauce would be yummy on a bagel topped with cream cheese and the cranberry sauce. I really love your channel. ;-)

    Thank you for sharing! When I was a kid (Senior now) my Father used to make home made Egg Nog. I am Sorry I never learned his recipe! I remember he whipped up the egg whites in the end and topped the egg nog before chilling and serving.

    My Grampa used to make egg nog along with the best fudge I have ever tasted. I'm 65 now and I really look forward to the Holidays when the nog starts to hit the shelves. I've been drinking it as long as I can remember.

      It's the opposite in my household, lol. I have a recipe for an eggnog pastry cream that I've been dying to use. I think using it in a trifle for Christmas would be perfect. Especially since I can send most of it off to my siblings, lol. Can't imagine eating an entire trifle by myself... 😳

    just made this but totally different. i did 2L whole milk with 3 tblspn butter and Saigon cinnamon. honey and vanilla with the yoke and about 3 egg white frothed. i put the egg white in last and it seemed to work well i will see when it is cooled. thanks for the recipe!

    It's crazy how much different everybody's recipe is for old fashioned egg nog. Essentially the ingredients are the same, but the order in which the ingredients are added and/or cooked seems to vary with each recipe. This is my first year making home made eggnog so it was really trial and error. Tried 2 different recipes and the finished product was wildly different. First batch tasted good but didn't blow me away. The taste was very predominantly vanilla and not enough spice. I chalk it up to using pre ground nutmeg and not using enough cinnamon. Texture was nice and thick, maybe too thick, like a thick custard or mousse. Not awful for first attempt but was expecting a little better. Tried a whole different recipe this time, and didn't even bother with making a meringue, just focused on the nog itself, used fresh nutmeg and cinnamon sticks as well as ground cloves. The finished product had a much better taste but the color was more of a light tan as opposed to an off white(not a big deal) but the texture was off......was way too runny, not as thick or fluffy. I'm going to tinker around with the recipe but essentially I'd like to make a batch that has the flavor of the 2nd batch but a consistency similar to the first batch, maybe not quite as thick, but thicker than the second batch. If I can find that happy medium then it should be the best batch of eggnog that I've ever tasted.

    Marvelous! Egg nog is only available in stores a limited time. Love the recipe. Going to make it sugar free however, so I can indulge in it more often! Very glad to find it is cooked alsol Rum is my alcohol of choice to spike these, the flavor melds very well.

      Same. My daughter loves 'nog' as she's called it since she was little. My mom used to make fresh egg nog for just us with our farm fresh eggs and milk. It was Heaven in a glass.

    Good idea to strain the mixture prior to bottling to remove egg yolk strings.

      If you temper it properly there shouldn’t be anything to strain. But if you make a mistake and there are cooked pieces of egg, you can definitely strain it.

    "Old fashioned homemade eggnog" does NOT imply less expensive than store bought eggnog in any way, shape or form. Just the cost of the cinnamon sticks alone will set you back the same cost as a 1/2 gallon of store bought eggnog. Do it for the quality, but NOT to save money.

    1. Can you substitute stevia for the sugar?
    2. I'm not a drinker so what are some typical kinds of alcohol you could add for the adults?

    Observations and thoughts.....the milk/cream mixture doesn't thicken unless you whip it rapidly the whole time and then it isn't a custard. Maybe I leave the cream out like she did.

      If there is a need to strain it you certainly can, but there's generally only a need to strain it if you've made a mistake and the eggs ended up chunky.

      Raw eggnog comes out thicker because of the egg whites that get folded in. I like my eggnog cooked so do this recipe then whip up some fresh whipped cream and fold that into the eggnog

      How do you know if you overcooked the egg mixture? While mine was cooling on counter for that hour, it turned very grainy/gtitty in appearance and texture? What did I do wrong? I used a strainer to pour it into my serving pitcher as I wanted a smoother drink. My strainer was full of that gritty substance....
