For me, the key to a delicious adobo is to marinate the chicken/pork. You can reduce the sauce to make thicker sauce. while some use coconut milk instead.
Olya: you don't have to use prepared/packaged adobo mix to make a delicious adobo. It's basically prepared with vinegar, soy sauce, some sugar, garlic, pepper, and bay leaves. You just have to balance all the ingredients. I'm a Filipino who now lives in the US and learned how to cook Filipino dishes through trial and error and observation. Lucky for most of us now, there's youTube where all information are available anytime. Don't be scared if you fail to achieve the desired taste you're expecting the very first time, there's always room for improvement. I can see you have the ability to improve. You're daring and brave. Coconut milk instead of starch. Original adobo has no starch. If you want it creamy sauce just put coconut milk. You can also add potatoes, hard boiled eggs, and dried mushrooms to the adobo.

You can cook it longer to thicken the sauce, no need to add cornstarch. The sugar in the sauce will caramelize eventually.
