Is there a certain name for those cream cheese blocks you used? In the UK, we don't really have anything like that apart from tubs of Philadelphia which doesn't look the same or have the same texture as what you used, they are quite soft.
In Germany, Philadelphia is actually as stiff as the ones she is using and all the other brands of "cream cheese" are really soft and even watery. I have made her baked cheesecake recipes with both Philadelphia and regular cheesecake and they both turned out really well.

I have never made Cranberry sauce before and for some reason the skins of my Cranberries were tough. I did not know they would do that and had noticed in your video that the skins of your cranberries curled up so I thought they would be fine. I didn't think to check them first. Did I do something wrong? My Cranberries were fresh organic whole berries. The Cheesecake turned out great and we worked around the skins.
+Sharon Thompson What you describe is how the cranberry sauce should be. Cranberries have a tough outer skin that does soften when cooked, but your sauce won't be smooth. There will be chunks of cranberries.

Hi Stephanie! Many years ago you used to make this recipe taller and with mascarpone... do you still have the recipe? I'd like to make it again with the old recipe :-P
The cheesecake would thicker if you used an 8 inch pan. Plus the baking time would be longer. There is a pan conversion formula which is: (Volume of the Pan Size you want to use) divided by (Volume of the Pan Size given in the recipe).

+Joy of Baking I have one of those thermostats, I should use it.. If I do and I find my oven not the temperature I have set it at, should I go ahead and increase or decrease my setting, so that my thermostat says my oven is the temp I need for my recipe?
+Melissa Seay yes you should compensate for the actual temperature. For example if your thermometer reads 10 degrees lower than your oven setting. Set your oven 10 degrees higher than called for in the recipe.
