I accidentally became the 'pie' baker in my family when I was 12 years old. I refused to use a metal pan. So every year on my Birthday and Christmas I received 2 pie pans until I moved out at 18. At family gatherings and events I was ALWAYS asked to bring the pies. I would call whoever was in charge of the event (usually my Mom) with a list already and ask how many of each flavor of pie. I'm glad you enjoyed her pie 🥧!

I put dabs of butter in with the apples, omit the cinnamon (cuz I'm allergic to it) and replace the sugar with sugar free vanilla syrup. It taste amazing and won't affect my diabetes negativity.

I add the lemon juice to the apples first. It keeps the apples from turning brown. Then, I mix all the dry ingredients together first in a small bowl, then add it to the apples so that everything gets distributed evenly & you won't have a clump of salt, flour or cinnamon in one spot. Mix once & done. I add a few thin pats of butter on top of the apples before I add the top crust. If you wet your finger & run it around the edge of the bottom crust, it helps to seal the top & bottom crusts together. Make a few slits with a sharp knife on the top crust to help release the steam. Then, I put an egg wash on the top crust.
It look so good Ling and I am so glad Lamb enjoyed it! While using your same ingredients add 2tsps of McCormicks vanilla extract and a 1/2 stick of melted butter 1tsp of mace or allspice, this will kick it up a notch
