Brushless motors are waterproof, any issues is due to electronics getting wet. I’ve done similar projects, and I just encased my ESC in epoxy and that solved my problems.
Use wrap on the outside before screwing in. Or electrical tape, just tape left right and center. You also can use a plastic cup to encase the motor so water is less likely to splash on it. Or use some gears and mount the motor downwards. Nicely done. Be accurate.
