    Looks really good! I plan on doing a pork shoulder at 225 too. How long was the cook on the one without the fat cap?

    They look good! I always remove the fat cap. We have have had a lot of pulled pork before with a lot of fat and never cared for it.

    Great video. I usually do fat cap on. I am going to remove it for Thanksgiving. Those turned out perfect. Keep smoking and Happy Thanksgiving.

      Thank you! I’ve started leaving just an 1/8 of an inch on and love the way they are turning out. Creates a great bark on both sides and the golden nuggets are plenty throughout. I’ve smoked pork butts for 30 plus years with it on. I think I’m converted now. Thank you for watching.

    Hey Luvy! Question: So did you actually smoke then at 250-270, or did you do them at 225?

      I smoked these at 225 all night and then bumped up the last couple of hours. I normally smoke them at 250-275. I had plenty of time so went lower temp.
