I smoked these at 225 all night and then bumped up the last couple of hours. I normally smoke them at 250-275. I had plenty of time so went lower temp.

They look good! I always remove the fat cap. We have have had a lot of pulled pork before with a lot of fat and never cared for it.
Also I like to use the 3eyz rub too.
