  • These are 2 side dishes that are must haves for my family. And the best part, they are so easy to put together. Make them ahead, leave off the toppings, and store in the refrigerator. On the big day, add the toppings and bake.

    Sweet Potato Casserole:
    Preheat oven to 350 degrees
    Butter a 2qt casserole dish and set aside.
    Ingredients:
    4 cups fresh baked sweet potatoes, 5-6 medium potatoes
    1 cup granulated sugar
    2 eggs
    1/2 cup heavy whipping cream
    1 tsp vanilla
    1/2 stick softened butter
    Mix well with hand mixer. Pour into casserole dish.
    Topping:
    1/2 cup flour, self-rising
    1 cup brown sugar, packed
    2/3 stick butter, melted
    1 cup pecans, chopped
    Stir together mixing well. Spoon on top of the sweet potato mixture.
    Bake 35 minutes.
    Pineapple Casserole:
    Ingredients:
    2 - 20 oz cans pineapple chunks, reserve the juice
    6 Tbsp reserved pineapple juice
    1/3 cup granulated sugar
    5 Tbsp flour
    1 cup cheddar cheese, grated
    1/4 cup butter, melted (1/2 stick)
    1 sleeve Ritz crackers, crushed
    Preheat oven to 350 degrees
    Butter 2qt casserole dish
    Combine flour, sugar, and pineapple juice. Stir well. Add pineapple chunks and cheese. Toss together to combine. Spoon into casserole dish and top with cheese. Combine crackers and butter. Spread on top of pineapple mixture. Bake 350 degrees 30 minutes or until bubbly.
