Ingredients for the vegan recipe, homemade hummus:
- 300g dried chickpeas or 600-700g hydrated and boiled chickpeas (see preparation method here);
- 200ml olive oil;
- juice of one and a half lemons, or to taste;
- 300g Tahini paste (sesame paste);
- 7-8 cloves of garlic;
- 1/4 teaspoon of sumac (optional but mandatory);
- 6-7g of salt, or to taste;
- 200-250ml of water, or chickpea broth, after boiling;
For garnish, olive oil, green parsley, sweet paprika, sumac or chili flakes, according to preferences.
If desired, the boiled chickpeas can be peeled, giving the hummus paste a smooth and creamy appearance.
