Pies are one of my absolute Favorite things. I am absolutely a pie person. Apple and coconut cream are my top picks. You're right though. Out of all of the people I know... I'm the only person that makes them on a regular basis. I have apples on my counter right now, that are intended for a pie. But I don't see any of my younger friends making pies... They are a bit time consuming. But once you've done it a couple of times, it gets a lot easier. You freeze any dough scraps or make extra dough, and you end up having that part ready to go for future pies. That's what I do anyway. Store bought pie crust is NOTHING like homemade. It's gross in comparison.

It's actually quite easy to make a banana cream at one end and coconut cream at the other end. Just slice banana at one end and pour your custer over the banana end and then add the coconut to your mix for the other half. I sprinkle coconut on top of the meringue to ID the coconut side
I try to make a family of 45 plus friends the best tasting delicious dessert they have ever experienced. I've been lucky to have enough time to explore new ways of making things better while making sure that food allergies won't be a problem. One of my creations last weekend was bread pudding cake with cherries at one end peaches at the other and apples in the center, topped with a nice butter cream drizzle. The taste was amazingly delicious and was made from fruits I grow and eggs from the back yard.

Coconut cream pie is my husband's favorite pie. I usually make it in a pre-made graham cracker crust. Sometimes we'll drizzle a little bit of chocolate sauce over a piece. So good!

I love the 13x9 pans. Especially the foil disposable ones. I use all disposable foil pans for all of my holiday foods. Everything except my mashed potatoes. Clean up is easy, no fancy dishes either. I use solo plates and cups and real silverware. I’m 65 years old and I’ve never had a dishwasher. Anyway… any kind of a pie or casserole that I can use a foil pan for I’m all in. And this is my 2nd favorite pie. 2nd only to lemon. I’ll definitely be making this. Thank you Paula. ❤️

I will definitely find this months issue. Cooking with Paula is one of the only magazines I will buy anymore. It has more recipes than other cooking magazines and less ads. I also enjoy Paula and family. The price is Right and you get more for your dollar. I might sound like an advertisement but in today's world you pay attention to everything you spend money on. I'm surprised you don't use the Kitchen Aid mixer or a food processor Paula to make that pie crust. Too much work to do it by hand and it works fabulously .
Ms. Paula, my grandmother did freeze her butter but then she would use the grater to shred it and her pie crust turned out perfect every time. If you try this cooking hack, let me know how it works for you. I still do it to this day and like my granny (Ms. Rosa Lee), my crusts are perfect and delicious.

Is this the same as a coconut custard cream pie? My mother-in-law used to make a custard cream and I cannot find a recipe for it. A lot of people use a vanilla pudding and mix coconut in it which is not the same

The lack of heat from the hands on the dough makes the dough flaky. When I make pie dough, I make a point not to touch it a lot.
