INGREDIENTS:
3 tbsp of oil
1 tbsp of butter
3 onions sliced
5-6 cloves of chopped garlic
1” ginger chopped
1/2 cup of cashew nuts
5 green chillies slit
10 raisins
5 roughly chopped tomatoes, cook till tomatoes are soft
1/2 tsp of turmeric powder
1 tsp of red chilli powder
1 tbsp of freshly chopped coriander
2 cups of water
300 gms of paneer
1 tbsp of oil
1 tbsp of ghee
1 pinch of hing
1 tsp of cumin seeds
1 tsp of garam masala powder
1.5 cups of fresh green peas
1 tsp of coriander leaves
1/2 tsp crushed fenugreek leaves (kasuri methi)
1 tbsp of butter
METHOD:
Heat 3 tbsp of oil
Add 1 tbsp of butter
Quickly add 3 onions sliced
Sauté the onions till they are brown in colour
Add a little salt if needed to speed up the sautéing process
Add 5-6 cloves of chopped garlic
1” ginger chopped
1/2 cup of cashew nuts
5 green chillies slit
Add 10 raisins
5 roughly chopped tomatoes, cook till tomatoes are soft
1/2 tsp of turmeric powder
1 tsp of red chilli powder
1 tbsp of freshly chopped coriander
Sauté and cook for a minute
Add 1 cup of water
Shut the flame, wait for the ingredients to cool down, grind into a fine paste
Take 300 gms of paneer
Cut into 1” cubes
Heat 1 tbsp of oil
Fry the paneer evenly
In a kadhai,
Heat 1 tbsp of ghee
Add 1 pinch of hing
Add 1 tsp of cumin seeds, let it splutter
Add gravy
1 cup of water
Add 1 tsp of garam masala powder
Mix it well
Add 1.5 cups of fresh green peas
Cover & cook on a medium to low flame for 5 minutes
Add the fried paneer cubes
Add water if needed
Add 1 tsp of coriander leaves
Add 1/2 tsp crushed fenugreek leaves (kasuri methi)
Gently mix it
Cover & cook for another 2-3 minutes
Remove in a serving bowl
Drizzle fresh cream on the dish
For Rogan
Melt 1 tbsp of butter
Add 1 pinch of chilli powder
Shut the flame
Drizzle the rogan on the dish
Garnish with fresh coriander
