  • Today I'm cooking frugal meals for one. I'm also sampling a product that a viewer sent me that could help lower energy costs on meal preparation. These meals are between $2-$3 and can easily be scaled up to feed a larger family because for the first dish I counted all of the cost of a bag of pasta but only used 1/4 of the bag.

    CREAMY PASTA
    pasta shells 0.48 - Only used about 1/4 of the bag.
    zucchini 0.72
    2 roma TOMATOES or some cherry tomatoes cut in half 0.70
    1/2 of Trader Joes whipping cream 0.84 ( you only need about 1/8 of this box)
    TOTAL = 2.74
    Cook pasta in salted water until al dente, rinse in cool water then set aside. Then saute vegetables in a little oil. Add 1/4 tsp garlic powder, 3/4 tsp smokey paprika, salt to taste, 1 tsp of tomato paste if you have it ( or more to your liking), and any kind of heat spice if you want it. I used tougarashi seasoning to add a little heat but any red pepper would work. Add heavy cream. I used less than an ounce. Add al dente pasta back in. Stir and serve.
    *you can make this with more sauce if you want by adding more cream in and a little water or broth if desired ( or water and bouillon). I wanted just enough to coat my pasta and vegetables.
    BUTTER VEGETABLES -INDIAN CURRY
    tomato sauce small can 0.44
    1 russet potato 1.00 but preferably yellow or red potatoes -hold their shape better when boiled
    1 red pepper 1.00 - I only used 3/4 of it.
    1/2 of Trader Joes whipping cream 0.84 ( you only need about 1/8 of this box)
    rice 0.44 1 cup dry rice
    use the rest of the leftover zucchini from the first dish
    TOTAL = 3.28
    This could feed 2 people as is. To scale this up, add another 1/2 - 1 cup rice and another potato and use all of the red pepper. This should work for 4 people.
    Cook 1 cup of rice, set aside. Boil diced potatoes until just tender then drain and set aside. saute vegetables in a little oil. You have the red bell pepper and the remaining zucchini from the first meal. Start by adding 1/4 tsp garlic and onion powder. You can add more later if you feel it needs it. Add 1/4 of the tomato sauce. Then the heavy cream. Lastly, add the garam masala. I recommend starting with 1/4 to 1/2 tsp , let it simmer, then taste it and add more as desired. Let summer for awhile so that flavors develop. I thinned my sauce out with a little water (about 1/6 cup ). When taste is where you want it, add in potatoes, stir and serve next to rice.

    Your son is just like me--in culinary school, my "Chef" instructor was always so mad at me because I TOTALLY broke all the rules---at my first year graduation, she said "I don't know how you ever passed, you never listen!" I said, "EXACTLY"!!!!! When I opened my first restaurant, my customers would always say "I don't know what it is about your food, it's always soooo good, and I would say "Well, I'm not afraid to break all the rules!!!"     About the Togarashi. The type of Togarashi you have is what it called “Ichimi Togarashi” which is just chili powder. There is another type called “Shichimi Togarashi” that is a blend of those same chili flakes, ground dried orange peel, sesame seeds, ginger, nori, poppy seeds and sansho. They typically bring a small shaker bottle of it with a bowl or ramen or udon at restaurants. Both types are delicious.
    The rice cooker clicks over to warm because it’s designed to do that when the pot gets too hot. Less of a fire safety thing and more of a “don’t burn the rice” thing. When the rice in the pot doesn’t have any water left to absorb, the pot gets hotter than 212 degrees which triggers the keep warm setting. If it kept going the rice would scorch.

      Hi Cheryl 😁 Thanks so much for sharing this about the togarashi. I would love to try the shichimi togarshi. Sounds delicious with the orange peel and I love sesame seeds. Wondering how many ramen places I ate at and didn't know this seasoning was next to me 🤔 Do you know why this chili powder smells so different from my other chili powder? The scent is intoxicating. 😂 I love it.
      That's interesting about the warm function that makes sense but weird that it shut off when more stuff was added to the pot. Maybe it cooled it down? Thanks for the feedback.

    I bring this dash cooker on every trip cuz I got kids. It cooks one box of Mac and cheese nicely. I use it to reheat leftovers. Heat up milk 😁.

    Where was that when my life was a never ending struggle?? Heavy cream is the bomb! Over the holidays I splurge on real cream for my cooking and baking. Also, I've found that I don't eat as much when I use the "real" ingredients. Heavy cream, real butter etc...
    edit to add that when I'm cooking for one or at most two people that the little packages of cream cheese (like when you buy a bagel in a convenience store) that can be used to make a "cream" sauce. Just heat it and add water until you get the consistency you want. It's one package per person, but as I said, it really only works for 1 or 2 servings.

    Ardent I love watching your TH-cam videos. I know that a lot of people need help with recipes and this one being how to cook with just a rice cooker, could you please make more for the rice cooker. I've made soup, meatloaf chili lentils in mine experimenting

    I have a dash egg cooker, and I love it. you can "poach" hard boil, or make small omelettes in it.

      Back in 1980 I was at tech school for the USAF in Rantoul IL, in the NCO dorm. I had a hot pot for boiling water and I used it to make boiled potatoes, other vegetables, canned soup. It was a good break from the dining hall food.

    This cooker is perfect for a gift for a senior citizen too. None of my senior friends eat big meals anymore and don't want to cook from recipes that are 4-6 servings dirtying up lots of pots and pans. I think a curry or tiki masala sauce recipe will be on this week's menu.

    I was gifted a small cheap rice cooker like this one when I got married. I use it all of the time, and it still works almost ten years later! I've never used it to cook something other than rice before though. I wish I'd tried that when we were newlyweds, but now our family is too big. Oh, well.
    I agree that this can be a great tool for those who don't have access to a stovetop! I'm going to remember this when my kids are grown up and moving away... In another 12-17 years. 🤣

    I also keep leftover tomato paste, chipotles peppers in adobo, lemon juice & little bits of whipping cream in sandwich bags labeled in a large freezer bag.

    I do a lot of cooking in my rice cooker. (A basic cook/keep warm with a steamer for the top.) Eggs, noodles, hot dogs, soups, veggies, even simple baked goods! And yes, it really lowered the electric bill as well as keeping the kitchen cooler in the summer! Makes plenty for the two of us 👍🏻

    I love a curry and I find them forgiving as far as ingredients. I change them up as needed. I prefer garam masala above curry powder. The smell alone is fantastic. 🤩

    I have been thinking about getting a rice cooker but have a teeny tiny kitchen with even less storage space. Not only that but I have a special pot from the 50s that makes perfect rice. Have been using it since the 70s and can make perfect rice without a even thinking about it. Lol. Still...the rice cooker calls to me everytime I see someone using one.
    Such a dilemma. 🤪

      That's been my dilemma with getting an air fryer ( plus I don't want to spend additional money). I had a lot of fun with this one though. I can see myself making a lot more meals in it.

      @@patpeters6331 I still want one but I just used that Macy's gift card I was saving for a new set of sheets 😂 My birthday is around the corner though. 😂 I don't have space for the toaster oven plus an air fryer though- so I think I will need to donate the toaster oven if I get the air fryer. I have a bucket list of recipes I want to try in the air fryer. I'll check out those channels later. Thanks for that.

      I’ve had both the air fryer and a toaster oven. They have toaster ovens with convection setting and it works like an air fryer. I miss that one. I use my air fryer (6qt)but it’s unsightly. It’s like an huge egg.

    I remember how my grandmother had problems for cooking for one in her later years, then she had an idea.
    Many of her old friends were in similar situations, so they set up this rotating cooking setup. each day someone else would be the head cook and they would go and make dinner together.
    this way it was more economical also they had company and were never lonely, meanwhile they could hatch plans for dinners that left grandsons and granddaughters a bit more rotund after weekend visits.
    you might be able to stop one grandma with a lot of "I am too full", good luck aganist 5.

    I like to use my crock pot outside in the summer so I am not adding heat to the indoors I am cooling with the AC. I have never used a rice cooker.

    What a neat little rice cooker! Making a mental note for the future, if we ever have an empty nest. Our eldest got married & had a baby, & thankfully they come over a couple of times a week, so our nest expanded instead of emptied!
    Your second dish makes me crave butter chicken. Garam masala is so intoxicating! An old friend shared her favorite recipe with me, from the Two Sleevers blog - their Crockpot Butter Chicken is the best ever. I’ve yet to feed it to someone who didn’t like it! They recommend making the garam masala from scratch using their recipe, & it is good - but I’ve had the same excellent results using garam masala from the grocery store, & it’s quicker. If you’re looking for a good recipe that never fails, I recommend googling it. (Note: I use half the butter the recipe calls for & it’s plenty rich for my family.)

    That little cooker looks really interesting! I’ve noticed kind of a trend toward scaled down small appliances. My Mother in Law has a very cute mini waffle iron, and I’ve seen small donut bakers, Bundt pan makers, etc. Seems like they’d be really great for singles, couples, etc. when you aren’t feeding an army. Your meals looked delicious as always! Thanks for all your hard work that goes into these videos.❤️

      One of my favorite things is my toaster oven. I bought an inexpensive little pan set for it, one of the best investments ever! I only cook for two, so firing up the big oven was fairly silly, lol.

    Here are some ideas you might use for a diabetic video. I can't eat rice, potato or pasta. Yet, I enjoy tomato sauce dishes served on French cut green beans instead of spaghetti. I make my own cauliflower rice as a base for curry dishes. I've never tried making spiral zucchini or summer squash, but like the idea. And don't forget about spaghetti squash. I use the "sale of the week" cottage cheese at $1 to make a white sauce or to add protein. Thanks for all you do for us!

    Learning how to cook for one person is definitely a challenge for me now. Even when I cut my favorite dishes in half, I still have way too much, I am learning, tho! And yes, if I have too much, I just use it up in future meals!

    Just an FYI Michelle, the Red potatoes and the yellow potatoes have a higher sugar content, one reason they are so beloved world wide. Ps russet potatoes make better fries and hash browns potatoes because they have a lower sugar content and don't tend to burn or fall apart.

    That's become my number 1 appliance. I like cooking rice with coconut milk instead of water, but I can rarely use a whole quart so I pre cook rice and freeze single servings. It makes meal prep a snap. Almost everything freezes well. It's excellent for oatmeal, frittatas and ramen/pho. And the best benefit, like you said, it adds zero heat to my kitchen during the long hot summer.
    I prefer the lower wattage (200) Dash or Itaki to the higher wattage (300) Aroma rice cookers. They all have recipes online. I've heard CHEESECAKE is ❤

    Gone are the days when a toaster would last 20 years, nevertheless Dash makes great little products. Weight Watchers was even selling them. We purchased the waffle iron but find it's not easy to clean. The rice cooker pot is dishwasher safe which is cool. Just keep an eye on the interior marking for how much to fill the pot.

    When I make my curries, I use BOTH curry powder AND garam masala, equal parts of each, with the curry powder added at the start of cooking, and the garam masala added near the end. I don't combine potatoes and rice in the same dish, because they both serve the same nutritional purpose, which is to fill you up with carbs. Your curry seems ok, if all you want is to fill your belly with carbs that tastes good, but you should probably swap out either the potatoes or rice for some sort of cheap protein. For my meat-free curries, I usually do a vegetable and bean curry, served over rice, or a vegetable, potato, and pea curry that stands on its own, not served over rice.

      Hello 😁 thanks for sharing your version of curry. I'm definitely going to try adding a little of the curry powder next time, although then it will be more of a curry instead of a butter sauce. I'm use to eating potatoes with rice in curries. It's very common in Thai cooking and something I've come to love. I usually use tofu, but there's no way to fit that in for $2.74.

    I am not sure how cooking with such a small rice cooker is, but with my own, I actually add everything along with the rice cooking process. Exception would be meat. I cook that beforehand

    Somehow I missed this video from two weeks ago! I love the idea of using the mini rice cooker and I like these recipes. I have a similar rice cooker (maybe a tad larger) that I found at a yard sale. Many years ago when I had to cook for myself in a college dorm room, I had only the following: a hot pot to boil water, a small toaster oven like yours (it was okay to use in the dorm), and a cube fridge. The one dish I remember making many times was a baked spinach casserole (one box of thawed frozen spinach mixed with an egg). A little plain but filling.

    Rice cookers are great. You can cook a whole meal in it, but I never tried to cook a meal without rice in the pot. Mine came with a steamer tray to steam vegetables. It has simple technology. I either is on or warm. There is no off button off is pull the plug. The button on the bottom of the pot as you discovered is the safety off. If the pot is too light the spring in the button keeps it from getting hot. I never thought you could use a rice cooker the way you have. It is a inexpensive alternative to the instant pot. Although it takes a little longer to cook.

    I love the ideas your videos give me. I also like Garam Marsala and use cream in place of milk as it lasts longer. I water it down. I “accidentally” spent 400.00 on only two trips to TJs so also have to adjust my other spending. Fortunately it’s too far to go to often!

      Something you can consider instead of getting a rice cooker is getting one of the non-stick inserts for your Instant Pot, and then just use the rice setting on that. Rice sticks like hell in the stainless steel liner that the IPs come with.

      I believe the mini rice cooker is like $10.00 at Walmart and if I didn't already have a small one I would of baught it not because of price, well that didn't hurt but because of I can't cook rice well than with a rice cooker and there is so much more than rice that you can make in it

    I love my rice cooker. I don’t have stovetop. Just a smart oven ( like a toaster oven) and a hot plate. You also can cook old fashioned oats and regular grits you cook in the rice cooker.

    You already had a rice cooker...your microwave! I love making rice in it....takes same amount of time. I use a large bowl and cover it with a plate. 20 minutes later perfect rice and NO burnt pan!

    The Dash griddles are great too. The mini I think is the same wattage as the rice cooker while the 8-inch is a bit higher; but, cooks faster.

    I quit buying my tomato paste in a can. I only buy it in a tube. I love the Cento brand. I buy it all Walmart. I really enjoy your videos, but I think I am probably older than your average viewer. I will be 50 on my birthday in September & I was married 20 this past March. I have raised 2 girls. They have graduated from high school. I think your videos are great. I wish you published videos more than 1 time a week. Thanks to you, I found I like curry & coconut milk. So thank you. I am a southern girl. I was born & raised in South Georgia. TH-cam has taught me about different foods I wouldn't have tried otherwise.

    There are three kitchen appliances I rely on most in my kitchen, and they are, in no specific order, a rice cooker, the instant pot, and my slow cookers/crockpot. Might go to meal from my rice cooker, which will serve about 4 to 6 meals, depending on how much you eat, is one cup of rice, one canned vegetable with the liquid one Ken been with the liquid one small can of tomatoes with the liquid and a little extra water to rinse out each can. I add whatever spices I’m in the mood for said it and let it go. Sometimes I will add some of my vegan chicken strips to add a little more punch and let me tell you it’s economical and I get quite a few meals out of it It.

      For frozen beets, I would probably throw them into my smoothies. I've also seen them used in soups and hummus. They make such a beautiful looking hummus.

      Coconut milk is good in your coffee, pasta sauces, soups, and basically anywhere you would use cream. Hope this helps. 👩‍🍳

I have a recipe that calls for it but couldn't find it in any of my local stores, I'm not sure why because I think it is a pretty popular spice, anyway I ended up ordering it from Amazon and it's supposed to be here in a couple of days. So, When it does I will make it, my husband doesn't like Indian food or curry or anything like that so I always make it just for myself and have too much leftover so this would be a perfect amount. As much as I was impressed with the recipes but what I noticed first was how organized your pantry was, mine is a disaster. Now I have to get my pantry in order so it looks like yours, I spend too much time looking for stuff. You know the saying that organization saves time, I'm sure that is a true statement.

      Hi Charlotte 😁 I'm so glad you like my video AND that my pantry looks organized to you. 😂 I've had some requests to see the rest of it, so I think I will, but I also use my shelf to store other things like cookware so it's not as organized as I would like. I have a small space so more storage is always needed.

    I’m curious if you have an instant pot? I’d love to see recipes utilizing if you do. I’ve considered buying a rice cooker as there are only two of us but I do like to cook once and serve twice type meals so I suppose I should opt for standard size rice cooker?

      I don't have an Instant Pot and I have little desire to purchase one. The Aroma rice cooker I use is listed in my Amazon store. You might like that. I agree on the cook once, eat twice. I don't want to be in the kitchen 7 days a week. 😂

      @@ArdentMichelle I understand..I was very hesitant to buy one but many friends told me how life altering they were….I have yet to find that true for just the two of us..I do however see how it would be helpful to working moms with kids. I actually think I’d enjoy a rice cooker more.

      @@marcialane8235 I have an emotional connection to food, so the idea of cooking some foods quickly instead of the crock pot, feels like a bummer to me 😂😂 I enjoy the smell of the cooking and the anticipation of the lovely meal as much as I enjoy the meal. My son has been urging me to get one, but I just don't see myself using it.

      Where do you live? I'm in Irvine which is adjacent to Newport Beach and I can get them for $1 on sale. Right now our Walmart has red bell peppers for $ 1.38 and green for .79

      @@ArdentMichelle I live north of Sacramento. I dont know why produce is so expensive here. We dont have a super Walmart and the Foodmaxx is across town. But I think the gas and time might make up for the expensive produce! Also, sorry I did not see your message for so long!!
