To help you understand the way one piece sorts arcs, 95% of the time the arc is just the island they are on. Also arcs are usually called by the island they are on (alabasta arc, little garden arc, drum island arc, ect). For the first few hundred episodes there are usually multiple arcs in a season but as time goes on arcs will get longer and longer and eventually will be the entire season. Also multiple arcs that contain a continuous plot/narrative make up a saga (east blue saga is all the arcs in the east blue, alabasta saga is everything from the start of the grand line though the end of alabast arc). Just to put a clarification Gear 4 Tankman (the fat one) is not like a real form of Luffy, is more a situational kind of transformation, is just Gear 4 Bounce man used while Luffy was extremaly fat because he was eating a lot, he used it just one time.

This is up to preference, but if you'd like to catch up faster, whenever you can I reccomend reading One Piece from time to time and then switch to the anime whenever you have more time to watch. Idk if this has already been suggested (I'm a new subscriber) but you could burn through one chapter and shave off 2 or 3 episodes from the anime at a faster time. You could catch up in half the time essentially. Reading it online on my phone helped me skip filler and then i'd watch the main "boss" fights on the anime. Hope you enjoy the One Piece journey :)
I started One Piece cuz of y’all. I’m on episode 30. But im assuming it gets way better cuz right now it’s simple and sometimes boring. It’s like watching Dragon Ball before Dragon Ball Z
