If the salsa is sour/bitter it’s because you overcooked the tomatillo, so I guess if they were gonna overcook with the residual heat then that would work.

You could also roast it which gives a better flavor and makes the heat from the peppers really pop. Roasting is anything high like 400°, and you only need to do it til the tomatillos are soft enough and have some browning or charring
That’s how I do my salsa verde. I don’t have a molcajete so I boil my chiles tomatillos garlic onion all together then I put everything in the blender and add cilantro and seasoning. It comes out good 😊
having the soap gene sucks, I always wondered what the hype was about for the herb that makes my favorite mexican dishes taste like they took a dunk in some dishwater.

I've used the same ingredients, but gave them a brush of olive oil, then broil them in the oven til they get charred on all sides, then into the blender. Delicious!

This is one of the better videos of somebody making a salsa verde in english, and if you can find some tomatillos that is turning purple, it can be green and purple at the same time, will taste better
i'm gonna make this one this week. a recipe my sister taught me for chile is 4 tomatos (roma is good), 8 jalepenos (or i like to substitute 4 hatch or 4 poblanos to give more depth and less heat) & a 1/2 tsp of salt. steam the tomatos and chiles in a steamer basket, peel tomatos and deseed the chiles, put in a blender with the salt and pulse a few times til consistent. (a small couple tweaks i like, throw garlic cloves to steam with the veg, and juice of one lime in the blender with the rest).
"How to make salsa without a molcajete"..."now serve it in your hot molcajete" lol fuckin love you dude. Definitely gonna give this one a try

exactly! so many cooking channels are so stingy about their recipes!!
Just a warning... There's a lot more "bulk" in two jalapenos than a serano.
Use a single serano and you're pushing toward a watery concentrate.
If that's something you have to be taught, then there's a problem

Quick tip, let the veggies rest in ice after boil.
This can prevent the salsa from being sour/bitter

15-20 Serranos and 5 cloves of garlic
