Ingredients for 8 glasses, 200 ml:
• For lemon cream: 130 grams of eggs, 130 grams of sugar, 67 grams of lemon juice, 105 grams of butter, 3.5 grams of gelatin and 18 grams of cold water, lemon zest;
• For white chocolate mousse: 225 grams of chocolate, 125 grams of milk, 250 grams of full-fat, chilled cream, 6.5 grams of gelatin and 33 grams of cold water;
• For dark chocolate mousse: 208 grams of dark chocolate, 130 grams of milk, 260 grams of full-fat, chilled cream, 4 grams of gelatin and 20 grams of cold water.
