The BEST KETCHUP RECIPE EVER!! And my technique for THICKENING any sauce

    My name is Colleen.
    It’s been a long summer waiting for my tomato harvest and to be able to share my ketchup recipe with you!
    I have tried so many ketchup recipes over the years and finally found one that checks ALL the boxes and tastes fantastic!
    It’s the closest to Heinz ketchup (or better) you will ever taste 😉
    Not only are you getting this delicious recipe, I am sharing with you how I thicken all my tomato products in a matter of minutes rather than standing at the stove for hours cooking them down.
    Whether you’re a beginner or seasoned canner I will take you through all the steps of how to prepare your tomatoes, make the ketchup and how to water bath.

    Ketchup recipe:
    22 lbs tomatoes
    4 cups white distilled vinegar
    2 cups white sugar
    1 cup brown sugar
    5 TBSP salt
    1 TBSP onion powder
    1/2 tsp cinnamon
    1/2 tsp ground cloves
    1/2 tsp allspice
    1/2 tsp cayenne
    46 oz tomato paste
    1/3 cup thermoflo (or clearjel)(* I’m sure you can substitute Arrowroot or Panoma’s Pectin if you prefer
    Trim, quarter tomatoes into large stockpot. Simmer until tomatoes are soft and tender.
    Remove excess liquid.
    Run tomatoes through food mill/tomato press (discard skins and seeds)
    ***reserve 1 cup of tomato juice for thickening later
    Simmer down 2-3 hours or DO MY STRAINER TECHNIQUE
    Add vinegar, sugar, spices and tomato paste and bring to a simmer. Meanwhile, place 1/3 cup of thermoflo into a bowl, slowly whisk in the reserved tomato juice. Then slowly whisk it into pot of ketchup.
    Water bath 10 minutes for pints, 15 minutes for quarts
    1 inch headspace

    I run all my tomatoes through our champion juicer which removes the skins and seeds. Bring the juice to a boil and then simmer for one hour. Turn off stove and let it cool. Once cool all the liquid floats to the top. I then take a juice pitcher with a fine mesh strainer and start straining out the liquid to create a nice thick sauce, ketchup or what ever you want to make. I can all the tomato water and use it for making rice or adding to any recipe that needs water added such as beans. = When you strain your tomatoes through the fine sieve the liquid should be clear to pink. I strain a batch of tomatoes through my sieve and whats left in the sieve I put into silicone molds to make pucks of tomato paste. I flash freeze the pucks and then place in a ziplock bag and use when we need paste.

    I love those square jars, I get mine at garage sales and second hand stores. Thank you so much for sharing, I made tomato sauce and didn't realize I was only 1 step away from making ketchup. My tomato strainer/mill is the old cone shaped strainer with the wooden mallet, works great. 👍🏽🙏🏽😉💖Have a wonderful day, I'm going to make some ketchup, thank you again.

      Sorry for my late reply Louise, it’s been a busy day! I love the square jars too, in fact I probably have more of them than the modern ones. I also got mine at garage sales or auctions. I would love to have and old school strainer 😍 I’m always keeping my eye out for one! Thanks 💜

    Was looking for a way to use up what little tomatoes i had left. Didnt have nearly enough for the recipe. Had to divide it in 4ths. Tasted great! Its in the canner now!

    That straining trick is a great idea! I have to cook mine down so long that it starts to get a little bitter. I will try your trick next year..

    I just watched your recent other video which directed to come to this video...I have to say that what you came up with is a genius idea! I will need to use all slicers unfortunately, but with your technique, I'm thinking 🤔 it will turn out okay 😊

    If you dehydrate your tomatoes and powder them, you can make tomato paste out of the powder.

      Yup, I have done that in the past too. I’m going to be roasting some tomatoes soon and I will definitely be keeping the skins from them. Thanks 💜

    Thank you for sharing this recipe! And for your great shortcut!! Can you give me an estimate of how much tomato sauce you had before adding the additional ingredients? You mentioned your jars may not have been full quart size and I am working with a lot more slicers. Therefore, Im expelling a lot more juice. Thanks!

      Hi! Hmmm…my pot is about 12 inches tall and it was about 1/3 full of sauce before I added other ingredients (I’m estimating)
      This batch gave me 4 exact quarts and 1 3/4 quart if that helps.

      ​@JustTheTwoOfUsHomestead Thanks so much! I had 6 pints of tomato Sauce before adding the other ingredients. I cut all other ingredients by 1/2. It is delicious!! I told my husband.'Where's the french fries!?' LOL.😅 The only thing I might change next time I'd cut the onion powder back a smidge. Just my taste. You are right, this is the BEST ketchup recipe!

    Can you please share the size of your stock pot you used when cooking the last of your ketchup before you start to can? Thank you in advance. Great video!

    Do you dehydrate the skins and make tomato powder??

      Yes! I try and dehydrate as many as I can. I don’t can tomato paste so by dehydrating the skins it’s my version of tomato thickener. I wasn’t as diligent last year and ran short very quickly. I will try to do better this year 🤞

      Hi Lorraine, Sorry, not quite sure what a shive is? If you mean the tomato press..I just bought it in facebook marketplace or a garage sale for $10. I’m always looking for deals like that 😉
