    I’ve made this twice now, minus making the noodles from scratch cause, whatever...
    But man...it is SO satisfying to create this. The flavour just makes your eyes roll to the back of your head. Thank you Babish for a fantastic tutorial on ramen making.

    For the marinated soft boiled eggs, there's a trick that saves on mirin and soy sauce: put the eggs and the marinade in a zip-lock bag, push the air out, and refrigerate.

      @@machupikachu yup, no more than 24 hours for sure. i left a few in a bag like this for 3 days, for science, and tried one every day. after about 2 hours it was alright, but 8-16 was the sweet spot, after a day they were still ok, but you started to lose the taste of the egg, on day 2 the egg's texture started to change and the taste of the marinade was a bit too powerful, and on day 3 the yolk looked like it was hard boiled and the whole thing was too salty and tasted like i was eating the marinade turned into some type of horrible jelly candy

      Nah, babish’s dough looks a bit soft to me, he added a bit too much water. I’ve made ramen before and you really do have to step on it to knead it since it’s too hard to knead by hand

    There's a little ramen shop a ways down the street from me and they make the most delicious black garlic ramen. They marinate their eggs with yuzu peel in addition to the regular marinade and put a bit of spinach for colour and crunch. Eat that in the dead of winter and you'll be warm for the rest of the day.
    Never underestimate the power of a good bowl of ramen.

      I usually add some canned, flaked ham/chicken to mine, and a boiled egg if I have some already done. Nowhere near as good as the 'real deal' but it works on a budget/low time.

    Anytime when you cook Japanese dish, you shouldn't use Lee Kum Kee soy sauce. Cuz its for Cantonese dish, the flavour is different from Japanese soy sauce. u should look for sth like Kikkoman soy sauce.

    Depending on how you like your noodles, you can get a smoother texture by dusting with corn starch instead of flour. The different is striking, particularly when making something like soup dumplings where the noodle is supposed to be very delicate.

    Love these Babish videos, and thanks for this walkthrough - it looks so delicious that I really need to pick up some ingredients asap!
    One thing to mention... You've spelled "tonkotsu" correctly, but in the video you call it "tonkatsu". It's subtle but they have very different meanings.
    tonkotsu (豚骨) == pork bone, as in ramen broth
    tonkatsu (豚カツ) == pork cutlet, which is generally breaded/fried, and served with cabbage, rice and an amazingly delicious dipping sauce - kinda similar to A1 steak sauce, imo
    The only component they actually share is ton (豚), which means pig. Both are very delicious dishes though... perhaps make a tonkatsu video next? 👨‍🍳

    I wouldn’t recommend using those metal Korean style chopsticks for noodles. I’ve burnt my lips so many times because they heat up wicked fast. Japanese wooden noodles all the way.

    Hands down, without a single shadow of a doubt, the pork broth in tonkotsu is literally the richest, porkiest, most hearty, most delicious broth I have ever tasted in my entire life. There is literally no substitute for a substance this heavenly. It is ABSOLUTELY WORTH EVERY SINGLE DROP OF SWEAT PUT INTO MAKING THIS DISH. WATERY SOUP THIS IS NOT!
    With that said, I will admit that it is A LOT OF WORK. I want to be able to eat this everyday, but alas, I neither have the time to watch a pot boil all day, nor I have the money to burn on expensive pork bones.
    So is there a less epensive way to make this? Does there exist some elusive "instantly tonkotsu" dry soup mix out there that I can purchase? I am willing to sacrifice SOME FLAVOR, as long as I can still have that rich pork flavor in the broth.

      'Tare' really just means 'sauce.' Like, a tare for Japanese dumplings is usually just rice vinegar and soy sauce, with optional rayu (a chili oil).

    Just to encourage anyone doubting their abilities; the pork isn't actually hard to make, it just takes time. The broth looks similarly long-winded but simple.
    No, it only looks to be the noodles themselves that are tricky; so if you buy dry or fresh noodles that should work beautifully.

      Japanese has tons of homophones, more than English, due to how Chinese readings got adopted into the language. But tonkatsu and tonkotsu are not pronounced the same way. The o and a vowels sound different.

    In Japan even great bowls of ramen go for 450-650yen (roughly $4.50 -$6.50) while the US charges $10 a bowl. Its maddening how much they charge since these are far from premium ingredients and this is considered the equivalent of junk food to the Japanese.

      I am pretty sure my Japanese wife wouldnt lie. I should reiterate. She made the comparison of ramen to hamburgers. Hamburgers can range from poor to great considering what it is made of inexpensive materials such wheat buns, veggies, and minced scrap meat. Some burgers are cheap while a standard premium can go up to $20. For what it is some people consider a burger a balanced meal while others, like my wife and I dont, even though we love burgers and I am sorta a burger conciser where I like to get a local burger from where ever I go. Burgers, like ramen, have a spectrum of quality, styles, and ingredients, but, for the most part, burgers are far from the consequential balanced or healthy meal. Ramen is pretty similar. Aside from Mega premium made bowls, ramen consists of relatively cheap and inexpensive ingredients and does have its die hard fans but can you really have a proper diet with the majority of your meals of 650円 ramen? I am just annoyed that great ramen I have had in Japan from my pocket change is selling for $10+ where I live from ramen exclusive restaurants.

      I was in Tokyo in August, and I payed between 800-1000 yen (not including tax) for a bowl of ramen, at breakfast time. but I'm sure like most countries with Tokyo being the biggest city it's gonna be the most expensive, I'm sure outside of Tokyo you will find cheaper Ramen.

    It looks absolutely comforting and delectable, but you kept alternating between saying baking powder and baking soda for the alkaline solution. I'd think it would actually be baking soda, but even the recipe in the description says baking powder, so I'm not sure which you did.

      I mean, baking soda is already alkaline (a base), so I don't know exactly why baking it changes that or would be necessary. Baking powder is baking soda combined with a dry acid, to create the chemical reaction for leafening, even if you don't add acids (like buttermilk, etc.).

      under heat, baking soda changes from sodium bicarbonate to sodium carbonate, which is more alkaline. This changes its flavor, and also makes it much less water soluble, which is why ramen noodles stand up so well to soup.

      FUN FACT: You do not know what you're talking about. You didn't say one single correct thing.
      1) What the fuck is C02? Which atom is the "zero" supposed to be?
      2) Sodium bicarbonate does not become sodium carbonate by releasing CO2. What makes you think that? The bi in bicarbonate I suppose? That does not mean that there are two carbonate anions. It means there is one bicarbonate anion.
      3) For sodium bicarbonate to become sodium carbonate, first of all, an extra sodium cation would have to appear out of thin air. That is not possible.
      Secondly, the bicarbonate anion would have to lose a hydrogen to become a carbonate anion. I don't believe that is possible either.
      Maybe with sodium hydride? It might be possible for this to happen: NaH + NaHCO3 -> Na2CO3 + H2. I doubt that that kind of reaction is possible, but all I'm saying is that the equation is balancable.

    Tonkotsu =/= tonkatsu. Tonkotsu is pork bone while tonkatsu is pork cutlet (usually tenderloin).

    ive made my own Tonkostsu ramen 3 times, and it is indeed rewarding, takes about 2 to 3 days but worth it

    Theres a local ramen restaurant downtown where I live and my first encounter with traditional ramen was Tonkotsu ramen. Definitely worth every cent. Unfortunately I had a stomach bug that day but I still powered through.

    I learned that alkaline baking soda trick from Alex 😃 and the results is pretty amazing, the texture is very similar to those ramen noodles you get from Japanese restaurant

      You can also just boil standard store bought spaghetti/angel hair noodles in water with a little plain baking soda and get pretty good results. It's about 80% as good for 10% the effort.

      @@100nitrog2 have you try the alkaline solution method? If you haven't then you should try it sometimes, actually there's one ingredients (i forgot the name) that used in traditional ramen, and how it works is pretty much the same as baking a bicarbonate soda you increased the ph level of your dough and it's make the noodles more springy
      And BTW unlike Italian pasta ramen noodles doesn't have eggs on it

      Only fresh pasta has eggs in it. Dried pasta is basically just semolina flour and water. The reason I mention that method is because it's waaaaayyy easier than making your own noodles, and the results aren't all that different. In fact, I'm changing the ratio to 90% the results for 5% the effort.

    Love you dude, But "Tonkatsu" and "Tonkotsu" are pronounced differently because they are two very different dishes in the japanese food scene. If you order "Tonkatsu" (as you mispronounced "Tonkotsu" in this video) in Japan.... you get a Pork Cutlet with rice. Just letting you know.

      @@mrlahey2530 I mean, technically the issue isn't just that he's mispronouncing the name, but that his mispronunciation leads to him saying the name of an entirely different dish. No need to get so aggressive and assume that someone is a weeb just because the difference bothers them.
      Also he isn't saying o as in cot he's saying "o" as in cat. It might be a product of his accent but he should still take care to get the pronunciation of dishes right.
