I've been playing with this during the holidays and I realized I could get in the pose next to a wall (fear factor stopping me). The actual fear of falling and breaking my neck is totally stopping me from trying this away from the wall. There's no "healthy" way to fall from this pose, is there?

I had never done this pose before a recent workshop. Once we really warmed up with lots of chaturanga, poses squeezing shoulder blades onto the back, and backbends, we tried the pose. Using the blocks helped--I never strongly kicked up, and after a few tries I could do the pose without blocks (and without a wall). So, the long answer shortened is--don't kick so vigorously that you aren't controlled, and be sure you're really ready and feeling strong. Then, you can sort of "float" into it using your back strength as he did in this video! So, no, you couldn't "healthily" fall over into a bridge-like pose. But you can completely avoid that risk by taking it slow and using your strength to get into it rather than momentum of a kick. :) Something about the shape made it feel easier to not fall over, but it might just be in my back flexibility and strength's sweet spot. I hope this helps! (I'm a yoga teacher but still learning to do some of these advanced poses)
