Excellent insights Sohail. Just one observation. The emphasis was overwhelmingly on what the Mughals did not eat. Very little on what they DID eat 😃

Mughal food was rich and varied. There is a long list of different dishes given in Ain e Akbari and by Westtern travellers. There may be some changes in reipe but basic items wwere there including KKhichadi and Biryani.
Pushpeder Pant says,that all mughals including Aurangzeb ate khichri.Various cooks coined name of Mughalai dishes
