I used this video for my first calcot experience ever when I found some in the store in Huesca. My oven wouldn't get up to 200 so I cooked longer (and I did rinse the dirt off and dry them first). We weren't able to do the pinch/pull method (looks easy but not) so we resorted to the way the young lady did, pulling the outside off. I purchased both calcot and romesco sauces at the store which was much thicker than your sauce so we couldn't dip, but rather press or scoop with a spoon onto the calcot. Not much of a taste difference. The calicos were tasty and tomorrow I will try with the thicker ones I separated out from the 2 bunches. Thank you for this video. I have been dying to try these since I was told about them.
