If you want to use the palette style UV coloring method, I go through that in both of the above linked videos.
Additional info:
I've been modeling in Blender since about 2015 but more recently in the past couple of years. I've been making games and assets in Unity since 2011 and I'm currently working on a multiplayer RTS game that I'll be happy to announce later this year.
I use a Canon Lumix GH5 camera to record my videos with the Olympus 17mm F1.2 lens as well as the Laowa F2.0 7.5mm compact dreamer lens. Sometimes I also use a GoPro Hero 8, a Insta360 One X and a Sony rx100 mark vii. For audio I use a Rode NTG shotgun microphone connected to a RME Fireface UFX II sound card.

Your Modeling techniques are just simple and amazing.

I feel like after doing the low poly character, it’s so much easier to follow these 10 minute speed modeling.
And hell, we poke fun at E to extrude, S to scale, but that’s kinda really all it takes usually.

Woop woop~ Nice stadium!
I enjoy your videos you have a very good eye for visualizing when you model. Just a little tip in the spirit of keeping the 10 min deadline. When creating loop cuts paralel, like on the football field, try making one cut and then bevel it making it two, it very fast and precise. Or alternatively, make a double cut and scale it down.

For the steps, could you to one set of extrude-and-select-inner-faces, and then use F3 and 2 to start spamming it until it is done?

What was shift + r? How did you made space for the audience in 4:34?
Shift R repeats last action. For the seats I do I to inset and then E to extrude down.

Hey, that could be a cool idea, not sure how exactly - could you elaborate?
In edit mode, navigate to the object materials tab. Create a material to assign to the model as the base color. Then create another material that you will use as the model's second color. Select the faces that you want the color to be applied to and click "assign". The selected faces will now have that material. You can create as many materials as you want. :)
