Ya'll really need to use parchment paper or silicone mats when you freeze dry. Stuff will just pop off rather than you trying to scrape bits up off the metal pans

Typically with foams and meringues, you dont want to freeze dry them, they tend to deflate. To keep they're foam quality's you want to dehydrate them only for a day
Xanthan Gum thickens liquid...It is added when the liquid is boiling and must be rapidly whisked into the liquid to avoid clumping for best results...Definitely has an odd taste/after taste😉👍
