they're fitting for new monitors cause the old ones weren't fit properly. Ear shape does change and they have to be refit sometimes. It's just the material to make a mold of his ear canals. Alien Ears makes monitors & have videos you can look at explaining the process. It's a noise cancelling earpiece that plays music in your ear so you know when to come in, because most stages don't have monitor systems behind performers it can create for bad timing without.

They`re taking molds of his ears to make this earphones from which he can hear the melody of the song in concerts (because all instruments and the noise of the fans prevent him to hear his own voice). He have that thing on his mouth because your ears change their shape when you open your mouth. Since he`s gonna be all the concert with his mouth open to sing, they have to take the molds with his ears in that position. Same with Georg cause he does second voice.
