How can you avoid leaving out the phone # and website as it won't even let me get past that step without a phone # (website optional)

Sorry I just saw your comment. Last few times I did it I was able to just add google.com to a website field and that fixed it and I was able to request a postcard. But nowadays, after adding a phone number or a website, they request you to complete email or phone number verification, they are trying to avoid sending postcards. It's best that you try it on your listing and see if it works.
