What causes that crunching sound?
When specific organs or body regions are in poor health, the blood circulation is affected. There are nerve endings that extend across your body so that what happens on one end of the body may be reflected in a connected nerve ending at the other end of the body (the feet). In these cases of poor health and poor circulation, uric acid forms into crystal-like waste matter around the nerve endings in the feet. Massaging (and pressure point targeting) these "hard bumps" helps break up the waste matter and promotes blood circulation. It is the breaking of (and the grinding against) these crystal-like bumps that causes the "crunchy" sounds.

“Gori” is sort of a short version of “Gori Gori”. I sort of made up the word. “Gori Gori” means crunchy in Japanese.
