Just made this, I used fresh ginger which I highly recommend and a little extra ground ginger and thought it tasted more like the real deal. But the recipe is lovely, buttery, oats and gingery. So easy and quick as well. Thank you!
I.ve just made these but had to use quinoa flour and gluten free plain flour without any bicarb - they still taste delicious 😊 . Something tasty to have with my cup of coffee this afternoon 😊

I've got a jar of Opies ginger in syrup, I think I'll add it instead of candied ginger as the optional extra, which means I can use the ginger syrup instead of golden syrup. 😋

Just discovered the real gingerbread in the Lakes. It is so good. The originals are rolled alot thinner than this. Lovely cross between gingerbread and shortbread...very shortbread texture for sure. American ginger bread tends to be either sponge or hard as bricks. This is perfection.
Loved this gingerbread! My mum used to make Yorkshire Parking. I never got her recipe 😒 can you do a video making Yorkshire parking? I have tried a couple recipes they were not like my mums I’m sure that you would have a great recipe as every recipe of yours I have never been disappointed!. 👍
Golden syrup is easy enough to make for the future - take some sugar, a little water, and a slice of lemon or citric acid and cook slowly until all the sugar dissolves; add some boiling water, careful it could spit, and cook slowly, usually about 40 mins. It will go the amber colour. The lemon stops it from turning into sugar crystals. Slowly heat until it thickens. Stay thick enough or you will have a caramel type toffee. It's doubtful whether Sarah Nelson had access to 'golden syrup' in rural Westmorland back in 1854 - In those days it wasn't just a matter of picking up a tin of Lyle's (first sold in 1885,) from the local shop!
