How do you chicken those reversals and is there a way to option select it?

by pressing f+1+3 if you used 1 or 3 move or f+2+4.
for example you did df+1, you hold the one and press f+3. It's anticipation, there's no way to see a reversal coming and you cant chicken it once it connects.

A better thing to do than chickening is doing knees, headbutts, elbows or lows. I think chicken does only 10 damage (correct me if I'm wrong).
yep 10 damage for punch and 12 for kicks. chicken are still useful tho, there are some really good moves you would rather buffer with a chicken tho because of their usefulness (EWGF, JFSR, Demolition Man, Blazing Kick, most of Soccer Kick, wr2 from dragunov,steve, alisa and many more).

And for those left wondering what I dislike: They repeat the same phrases or words way too often ("boom", "opportunity") and oh come on, as if you hadn't either laughed of shaken your head despairingly at that one's silly laugh...
