So far I had the best luck with bioanalysis and archeology materials, I have one gatherer toon with these and slicing. I also recommend gifting companions up to level 50 influence, the last gathering missions take 13 minutes and 25 seconds.

Good luck to you. Personally I haven't had much luck with crafting as far as being lucrative. Like you said server can be different.

To some degree, but each crafting style has something they can make which is valuable, so just check and be vigilent :)
