With the arrival of summer, different varieties of vadam are made in Indian homes. One popular vadam is sago or Javvarisi Vadam. It's very easy to make and economical too. It is made during the Tamil months of masi and panguni ( feb, March,april) and stored for a year.
Ingredients :
To soak for 2 to 3 hours:

Sago/ Maavu Javvarisi - 1 cup
Water - 1.5 cup
2. Mix and keep for 10 min.
Rice flour - 2 tblsp
Water - 1/4 cup
To grind :
Green Chilli - 2 ( can be adjusted)
Lemon juice - 1 tsp
Salt - as required
Water - 2 tsp
To cook :
Water - 4 to 6 cups.
Curd - 1 tblsp to be added in the end.
Method :
* Soak 1 cup sago in 1.5 cups of water for 2 to 3 hours. It should be easily mashable between fingers.
* Pour it into a pressure cooker along with 4 cups of water ( upto 6 cups can be added according to the desired thickness)
* Pressure cook for 2 whistles.
* Add rice flour + Water mix and cook till the rice flour is well cooked.
* Let it cool. Once luke warm add the ground paste of chilli, salt, lemon juice and water.
* Mix well. To this add 1 tblsp thick curd. Beat the curd without lumps with a fork and mix it with the batter.
* Consistencycan be adjusted by adding hot water if necessary.
* Pour this as vadams of desired size, thickness on a cotton cloth in a sunlit area or terrace.
* Allow it to dry 3/4 th. Sprinkle little water on the back of the cloth and soak it for 10 to 15 min.
* Now peel off the vadams from the cloth. Keep it in a plate and allow it to sundry till completely dry and crisp.
* Javvarisi or sago vadam/papad is ready. This can be stored in an airtight and dry container upto an year.
* This can be deep fried and enjoyed along with tea, coffee or rice dishes.

Nylon javvarisi doesn't come out well for vadams. You can follow the water measurements in this video for javvarisi vathal. Soak overnight and 2 to 3 whistles enough

Namaste Mam, you said you will prepare in the night. Till what stage you will prepare in the night and will you refrigerate or leave it at normal room temperature, can you explain pls.

What is this sago special can you specify that
I tried this today. Half kayumpode vadam has broken on sheet. Can u clarify what mistake would I hav some.
Hi. If it is not boiled fully or if the thickness is very less it will break. It might break if it is too watery too. Did you use cloth or plastic sheet? If the cloth is not damp before making Vadam, it will absorb all the moisture and the vadam will.have cracks in it.
@@HappyHomeMakerTamil I used plastic sheet and rice bag cover. But javarisi was little hard. It is not mavu javarisi. I will follow ur Proportion of water next time. Thanks mam
