    Just found this video. When I was about 10 (60 years ago) my dad gave me ONE chocolate coved cherry as a surprise. It was 1959. Oh it was so good. I couldn’t understand how they managed to get the cherry inside the Chocolate. So I called it a miracle. He said that maybe for Christmas I would get a whole box. I said “ a whole box, that would be a Miracle”. Every year since then everyone got a box of Miracle candy till he died. Then my mom picked up the tradition, till the family got so big that there were 30 or so boxes of Chocolate Covered Cherries “My Miracle Candy” Now she does a box per family. Such sweet memories. She’s 93 and still gives out the boxes of my “Miracle Candy” every Christmas under the tree.

    I will never gobble down a chocolate cherry again. So much time goes into them. I will take my time, respectfully. But still eat a dozen. Thanks for posting. Great video!

    OMG Terry the eyes in the back of your head story is hilarious. When my boys were young I had them convinced I could see around corners and through walls because my china hutch was a corner unit and they way it sat reflected their bedroom doorway if I was standing in kitchen/dining or living room. When my oldest was 10 I heard him whisper to his 11 yo cousin "Adam, you can't do that, my mom can see through the wall"... Adam proceeded to flip me off through the wall..lol I yelled back from the kitchen "Adam Lee, I'll break that finger off and stick it up your nose"... he told his dad I was a witch. I love kids.

    Always were my favorite. When I was young there was a candy company named Lofts Candy, and their chocolate covered cherries were amazing. I never knew how the syrup got in there. Now I’m 84 and finally I know the secret.

    This one is one of the candies our family has made for generations. We use bakers chocolate for the first layer and milk for the second. Our other twist, we put vanilla beans in the sugar for two weeks before we make the cherries. We use the rest of the sugar to make sugar cookie icing😊

    Oh my your making my favorite...my dad use to love chocolate covered cherries and he would buy a bunch of boxes at Christmas and people would give them to him as presents...He passed away in 2008 so I buy a box at the holidays and eat then for him.

    I want to thank you for this video. My adopted daughter and I make soap. She has some old traumas and this results in a fair amount of anxiety. Yesterday it was hard for her to imagine a mellow afternoon like this. It's been nice to show her a family business that gets their work done while enjoying each other's company.

    This is one of my favorite videos. I never knew how that liquid got into chocolate covered cherries. Y'all are all very talented. I wonder if other companies double coat their cherrys.
    I think it's very possible that while many of us had perfectly wonderful childhoods, that somewhere inside us is a place that remains unfulfilled. I believe you, your Mom and your Dad fill these spaces.

      i watched another candy co making their choco covered cherries but they "wrapped" the cherry in a dough like mixture of sugar. Not nearly as appetizing as how the Hercules Candy co Candy Maker does it.

    I have been trying to learn how to make chocolate covered cherries for a long time. Just about every video on TH-cam is making a paste to wrap around the cherry then either dip in chocolate or place in a mold. Way too complicated and takes way too long for the paste to convert to liquid. The way you make them has worked very well for me and my friends all rave about them. Thank you very much for sharing your secrets. One day I will travel back east from Arizona to visit your shop and thank you in person, plus buy a little of everything!

    Chocolate covered cherries have been my favorite treat ever since I was a toddler. Other kids wanted m&m’s, I just wanted cherries lol. I even got the chocolate covered cherry blizzard at Dairy Queen. Loved seeing how they’re made.

      I'm not much of a "laugh-out-louder"...but when saw that YEARS ago...........I TRULY lost it!!! I dont know why, but that was the FUNNIEST thing I have EVER seen on TV!!!     I cant find chocolate covered cherries in the UK in stores... so I watched your video, tried making my own version of them using your technique- and I was one happy camper during the holidays!!! I imagine yours are 100x better- but for someone who hadnt had them for almost 8 years- they were heaven!!!!

    I enjoy coming back often to watch the videos hand dipping the chocolates at the former home shop. I know business has grown and hand dipping everything is no longer time effective but, it reminds me of going to a local candy store while growing up and the owner letting me watch him dip chocolate by hand while he shard stories of "the good old days."

      Hercules Candy Do you love that episode? It’s only my second favorite Lucy episode, but it is a perfect episode. They let Ethel go from the boxing department because she kept pinching the chocolates to see what was inside!
      New idea! Chocolate Coconut covered cherries! I love chocolates with that super finely diced coconut mixed in, and I love chocolate covered cherries. I bet both would go well together!

      Wow....I read how to make chocolate covered cherries probably 55 years ago from a recipe in an old Work Basket magazine my grandma had. I'm so excited to see it again.
      Thank you for making my only Christmas candy for the year. They were my dads favorite.

    I have a lot more appreciation for these cherries that I buy each year. My mom loved them and also my mother-in-law. They thought Christmas wasn’t complete without them. They both are gone now but the tradition continues. Thank you for sharing your expertise.

    I'm learning a bunch while watching your channel. Like when tempering chocolate, we pour about half the melted chocolate on the table, spread it around to cool it and then mix it back into the untempered chocolate in a bowl. Whereas you guys just do it straight on the table the whole process. Or seeding with melted chocolate and stirring in the chopped chocolate. Thank you for sharing your family with us as well!     I used to make these for my grandmother when I was in my teens. She did not like the store bought 1's. But she loved them when homemade.

    That is a very interesting way to get the liquid inside! My mom used to use a mold when making them. She'd soak her cherries in a mixture of the maraschino juice and Bicardi for about a week. Then she'd use the liquid and confectioner's sugar to make the liquid. She'd make the shell first, in the mold and then fill with the cherry and liquid. And then top it off with more chocolate. This was my mom's most requested thing every year! By the time I was old enough to even try one, she didn't make them anymore!

    So much easier than wrapping them in candy fondant first! Im 55 and My mother made cherries every year until she died..she would refuse to give anyone her recipe and it's written in her cookbook as her " SECRET choc covered cherry recipe..this brings back memories..she would make hers a few weeks ahead of time to allow hers to liquefy before gifting. Ps....Im going to try them this way but have my own secret addition that imgoing to try... ( add the white powdered vanilla to the 1st cup of powdered sugar...yum)

    I made them. I made a cherry cream center dipped twice, refrigerate centers, then tempered chocolate, dipped twice. I chose the stemmed cherries easy to dip.

    My friends and I made chocolate covered strawberries for a party one day. We had to store them in the garage overnight, and they froze.
    When we got them out and they thawed, they had juice in them just like the cherries... They were so scrummy.

    Not sure when or if you will read this as this is an older video but I’ve been watching your videos for a month or so now and it’s fascinating to see how everything is made. On a sidenote La Cucaracha does mean cockroach but it is a Spanish song and the song is actually about a general and his car. The general in the song refers to his car as a cockroach. Just some fun trivia.

    "La Cucaracha" is a political song that was written in order to criticize a corrupt Governor in Mexico. It is calling him a cockroach because of how he stole from the people to make himself rich (like how a cockroach steals food from people's kitchens). I can only remember the translation for the last line of the song, which reads, "he has liquor to drink, he has marijuana to smoke" lol (actually, the only reason I looked it up was because I noticed one day that they were saying "marijuana que fumar", and I wondered why it was being mentioned in a song that I thought was for kids lol).. (the more you know..).

      Because the first part of the lyrics is sung in the first person; the cockroach sings that he cannot walk because he is missing two back legs, a child having, presumably, pulled them off for fun. Not sure if the song has a political meaning originally. My mother taught it to me in Spanish and I hated it because it was cruel.

      armand publishing actually, the song saw its greatest evolution and increase in popularity during the Mexican revolution of the early twentieth century, which I don't think was carried out by children. This is when political themes were added and it became widely known. Since it's an old folk song, no one knows when it was originally written, or by whom..

    I used to make handmade chocolates many years ago...probably been almost 20 years. I never realized how good my chocolates looked...bit of OCD! In the 80's in High School we made chocolates...using a Potato , Icing Sugar filling. As a Young Housewife Obsessed with Perfection I rediscovered the old recipe.....I made trays and trays of chocolates. I made different shapes for each flavor including butter rum, mint, orange and my all time favorite Chocolate Covered Cherries. Maraschino Cherries were wrapped in the Potato Icing Sugar filling and sealed well...then left to dry slightly. Then each one was dipped with a fork into the chocolate. I would then make up Christmas Tins with a variety. Looking back now it was utter Madness...and Migraine inducing because of Course I was also in Charge of Quality Control!
    I am only 49 but Chronically Ill and haven't been able to do such things for many years now....I sure miss the satisfaction of Giving such a Gift that people really enjoyed! Thank you for sharing and bringing back good memories! Such a cool method for your cherries....a lot easier than hand wrapping each one with icing potato dough!

      I am 61 and use to make these with my folks on Christmas Eve Day. IT was a production line as my brothers were younger and not very coordinated. lol Besides they ate the candies faster than we could get them down to get solid. My question is, DID ANYONE USE PARAFFIN WAX in their chocolate? My folks did, as it was a Recipe called MARTHA WASHINGTON CHOCOLATE COVERED CHERRIES and then we made Peppermint and Spearmint Chocolate Patties after the cherries. This brought back such great memories for me. I would like to do it tomorrow with my kids and grandkids, but I don't know if you need to use the wax? HELP, Please from anyone. THANK YOU and HAPPY HOLIDAYS!

      @@tc247 my late mother used to make peanut butter covered maraschino cherries that were dipped in melted chocolate to which she had added a small amount of paraffin wax. She used the stemmed cherries and the stems were part of the finished product as well as being used as a "handle" to dip into the chocolate. These delicacies were absolutely beautiful to look at. Unfortunately, while I adore peanut butter and more than adore good chocolate, I don't care for the combination of pb and choc, so I rarely ate them. Making them was a long, tedious process particularly as my mom got older. Still am unsure why she added the wax to the choc, but I do know that in a lot of inexpensive, commercial chocs and choc bars, there must be wax in the products as I can feel a waxiness in the chocolate. I always remember the saying "Life is too short to eat cheap chocolate".

    I told my kids that whenever they lie, their ears turn red. My oldest(6), when trying to prove her innocence, will still tell me "Look at my ears! Do they look red??"

      When my niece was very young, she liked to brush my sister’s (her mom) hair. One day she was brushing my sister’s hair very carefully and picking up pieces and looking carefully underneath. I asked her what she was doing and she told me that she was looking for the eyes in the back of her mommy’s head. My sister had told the kids that she had eyes in the back of her head so they would behave themselves if they knew that she was watching them closely. It never worked with us when we were kids, but she got lucky and it worked with hers.

    I can remember 65 years ago I used to watch the candy makers at Knott’s Berry Farm, in Buena Park, California. We would stand at that window for hours. Thanks for the sweet memories.

      he explains why he doesn't like that. It still needs to retain some juice. Otherwise the sugar won't liquify properly and it will be more of a cream.
      straining the cherries ahead of time all of the juice will drain out and it won't liquify.

    my mom made these cherries as well as several other chocolate covered candies every Christmas when I was a child. I remember that the cherries could not be eaten straight away........they needed about a week or so to ferment, that is to say they needed time for the sugar to liquefy to the proper clear consistency. They were always so delicious, as were her peanut butter cups, peppermint patties and old fashioned chocolate fudge. We only ever had them at Christmas but they were worth waiting the whole year for to be sure!!!!!

    I have worked around lots of robotics, automated machines,, entire departments dedicated to a group of parts and that's how I imagined these were produced.     This is the first video of Hercules which I watched when it first was posted. I’m watching it again today in February, 2022, thinking of my Daddy.     Love the parent stories to the kids. My three little boys used to go to bed easily because I told them they needed to so I could take out their batteries to recharge while they slept so they could play the next day.

    This is my favorite Christmas Tradition my grandpa would always have them hidden and pull them out while we open gifts he passed away a few years back so now I have to carry on the tradition with my 4boys

    I love family businesses! This is awesome! There is a tiny confectioners here downtown, family owned for over 100 years in same place. We have been going there for years. In my neck of the woods it’s “Bourbon Balls”. Dark Choc covered cherry’s are my favorite.

    I just came across your TH-cam video. Chocolate covered cherries were my grandfather’s favorite candy. This brings back fond memories of him and how I enjoyed them then and now. I had no idea that the liquid inside was a result of the cherry juice and powdered sugar. Thank you for your video.

    Ok as a Mexican/Italian, I've heard so many versions of La Cucaracha. The one part that's always the same is that the cockroach can't walk anymore. One version is because he no longer has a leg to walk on. Another version is because he's too high from smoking too much weed. The last one is he can't walk anymore because he needs weed.

    I'm going to make chocolate covered pretzels with sprinkles this Christmas as a gift for everyone to enjoy. I always make about 20 pounds of fudge every Christmas too. Thanks for inspiring me to start making different candies for everyone to enjoy, instead of just cookies and breads!! Chocolate covered cherries are my favorite! Our Dayton, Ohio candy company stopped making their white chocolate covered cherries for some reason. Thanks to your video, I can try and make my own ones!!
