Hi good morning, our friends! Thank you so much for watching our videos and big thank you to some of you who always leave wonderfully kind comments for us. Somehow we’ve been very tied up at work recently so we couldn’t reply to each and everyone of you on time. Please pardon us. Hi Roland! I wanna know what is that missing "taste" in the curry that your wife is looking for? Please describe it - is it like spiciness or appearance of the curry itself or the richness/lemak-ness of the curry? I myself had a curry dish that I really really wanted to replicate and I managed to figure it out. Who knows - maybe I can figure out the missing piece of the puzzle.

Good morning SuperKnowledgeSponge. It’s the mix of spice that’s the puzzle. My grandmother’s curry is not very lemak but the spice mix used in the curry is very unique.

    Hi Jamie.
My wife cooks this dish here in Melbourne.
She additionally will add one star anise and one cinamon stick whole in the pot with a bunch of pandan leaves.
And she uses QBB ghee for added flavour instead of cooking oil.
The kids will kill for it.
    Thanks for your videos.

I cooked this according to your recipe.. Woah really a lot of effort, blending the ingredients using a quality blender, using a non stick pot to pan fry the chilli i guess really cut short the time, which i dont have. The outcome taste and feel is really what i have been looking for, for ages. Thank you!!! I used 1.4kg of chicken meat and 1.4l of water, the gravy was still very thick!! We ended up drinking the curry gravy, lol..

Looks delicious. I love curry with lots of gravy.
Just curious, could that missing 20% from your wife's grandma's curry be because you used water?
Back when we had to buy grated coconuts, we did a first squeeze to get a thick milk out of the coconuts. Then added a bit of water to squeeze a second time to get a thinner milk.
We'd use the thin milk to cook first and just as the curry was finishing up, we'd add the thick milk. Never used water in the cooking except to wet the grated coconuts for the second squeeze.
Maybe can try replacing the water with coconut milk and the coconut milk added in the end with coconut cream?
See if that makes it exactly like grandma made it?
    Just a suggestion.

Can i just add coconut milk only? Normally my curry paste is similar to urs but i only use coconut milk to braise the chicken and potatoes. The last part i add in thick coconut cream just a bit about 100-150ml. Other than that, ure curry paste is good very Nyonya.

I made this yesterday and we had the leftovers tonight. IT WAS DELICIOUS. The only trouble I ran into was in using the food processor for the paste. It didn’t really purée everything so it looked like pulp - not smooth. While cooking and after I added the water I decided to scoop out the sauce, excluding the curry leaves, and blend it in the Vitamix. That made all the difference. That produced a super smooth liquid that I put back into the saucepan. Next time, I’ll just use the Vitamix from the start. Nonetheless, it was really good. I added a cup of frozen peas a few minutes before serving. I will definitely make this again.

Except for 3-4 ingredients, bengalis (stay in eastern part of India) makes their chicken curry like the way you've shown. This will taste awesome & a great healthy recipe. Not too spicy, good for regular lunch/dinner.

Our curry in Singapore cooked by Chinese is highly influenced by Indians. In fact, most Chinese get their paste from Indian spice shop. So interesting 👍🏻🤓🤓

    • @spicenpans
      @spicenpans  5 ปีที่แล้ว

Hi Linda. Thanks so much for watching our video. We usually either serve curry with rice or bread on the side or add some noodles in the gravy directly before serving. Personally I like curry very much so I can just eat a whole bowl of it without any rice or noodles or bread so that I can give the curry my full attention. Haha

Hihi. Sorry for our late reply. Yes any meat curry powder will do. Coconut milk is the best but if you can’t get hold of it, you can try using evaporated milk and yes dried curry leaves are great too.

I'm hoping to make this yummy-looking curry tomorrow, but I can't find galangal. I went to two asian grocery stores here in Indianapolis, but no luck. I find dried online (thanks, Amazon) and could have it delivered by tomorrow. Will dried work?
