Please describe it - is it like spiciness or appearance of the curry itself or the richness/lemak-ness of the curry? I myself had a curry dish that I really really wanted to replicate and I managed to figure it out. Who knows - maybe I can figure out the missing piece of the puzzle.

Hi Jamie. My wife cooks this dish here in Melbourne. She additionally will add one star anise and one cinamon stick whole in the pot with a bunch of pandan leaves. And she uses QBB ghee for added flavour instead of cooking oil. The kids will kill for it. Thanks for your videos.

For me this us my favorite curry but I usually boil the potato for 10 minutes before adding it to the creavy and we cook the chicken with out the sicken but I love the paste very much thank u

I love your channel. You teach so nicely step by step. The difference between indian and south east asian curry is that SEA dishes need quick high heat saute ( i would mess it up) while for us we take time and saute on low heat . Your channel is excellent resources to teach how to do that

Can i just add coconut milk only? Normally my curry paste is similar to urs but i only use coconut milk to braise the chicken and potatoes. The last part i add in thick coconut cream just a bit about 100-150ml. Other than that, ure curry paste is good very Nyonya.

I cooked this according to your recipe.. Woah really a lot of effort, blending the ingredients using a quality blender, using a non stick pot to pan fry the chilli i guess really cut short the time, which i dont have. The outcome taste and feel is really what i have been looking for, for ages. Thank you!!! I used 1.4kg of chicken meat and 1.4l of water, the gravy was still very thick!! We ended up drinking the curry gravy, lol..

Looks delicious. I love curry with lots of gravy. Just curious, could that missing 20% from your wife's grandma's curry be because you used water? Back when we had to buy grated coconuts, we did a first squeeze to get a thick milk out of the coconuts. Then added a bit of water to squeeze a second time to get a thinner milk. We'd use the thin milk to cook first and just as the curry was finishing up, we'd add the thick milk. Never used water in the cooking except to wet the grated coconuts for the second squeeze. Maybe can try replacing the water with coconut milk and the coconut milk added in the end with coconut cream? See if that makes it exactly like grandma made it? Just a suggestion.

Tried this recipe, very fragrant and aromatic! Only pity is that I used a very common brand of coconut cream instead of fresh coconut milk. If not it should have tasted way better. Thank U for the TH-cam tutorial! This is a very simple receipe to follow.

I hope my best chicken curry would be like yours. But you can add carrots into the chicken curry as well cos carrots are sweeter vegetables and can make the curry left spicier as well.

Hi Wong. Yes this is not overly thick but not overly watery either. The candlenuts can help to thicken the gravy up lightly. If you can’t get candlenuts, you can use cashew nuts too. Happy cooking 🤓🤓
I'm hoping to make this yummy-looking curry tomorrow, but I can't find galangal. I went to two asian grocery stores here in Indianapolis, but no luck. I find dried online (thanks, Amazon) and could have it delivered by tomorrow. Will dried work?
It’s good. Just a suggestion, kindly mix the chicken with all spices till the oil separates. And if the spices stick at the bottom of the pan pour little bit of water. And then again start mixing. Am sure taste will enhance 😊. Do gv it a try.

I love to eat Singapore chicken curry from hawker stall everyday. The potato 🥔 is so soft.
This is the same recipe which we cook in South India, but I do not add coco nut milk. The curry will be so spicy and yummy.

I don’t know if you can use macadamia nuts in this recipe but it is the cousin to the candlenut. 😊
Yes you can. Basically it’s added as a thickening agent so since coconut milk will be added later, you can also omit candlenut entirely.

Only pity is that I used a very common brand of coconut cream instead of fresh coconut milk. If not it should have tasted way better.

I hope my best chicken curry would be like yours. But you can add carrots into the chicken curry as well cos carrots are sweeter vegetables and can make the curry left spicier as well.

Hi Wong. Yes this is not overly thick but not overly watery either. The candlenuts can help to thicken the gravy up lightly. If you can’t get candlenuts, you can use cashew nuts too. Happy cooking 🤓🤓

It’s good. Just a suggestion, kindly mix the chicken with all spices till the oil separates. And if the spices stick at the bottom of the pan pour little bit of water. And then again start mixing. Am sure taste will enhance 😊. Do gv it a try.
