What makes fishing much enjoyable is when you have friendly and helpful fishermen around you. It’s nice to return the favor by showing respect and gratitude back to others. My favorite Warden story is when I was fishing San Diego Bay on a pier aboard Naval Air Station, North Island. This pier was used by many active duty sailors but, was not a municipal pier. As such, California Fishing Licenses were required to fish the pier. A warden boarded the pier and began to inspect the licenses of the people fishing. He was making his way down the pier, checking licenses and I waited with my wallet in my hand, ready to show him the license. He looked at my wallet, told me thank you - without checking the license. When I got home, I realized that I didn't have my license with me. I had left it in my fishing shirt, the previous day.
You usually do not want to add the marinade. Just remove the fish, let any excess marinade drain off for a second, and then discard the rest of the liquid. That's going to be true for almost any recipe unless it specifically tells you to add the extra marinade. In general marinades are very intense. The idea is to infuse the flavor into the meat. A good example is soy sauce. It is very common as a base for marinating, but adding even a couple of teaspoons too much directly into the final dish will overpower nearly anything, leaving you with something far too salty to eat.
What do you mean, that we need more of it? Plenty of people help each other on the daily, but simply do not record themselves doing so. Most do not require a pat on the back for helping others, so they go unnoticed. There is more good than bad in the world, my friend. All you have to do is open your eyes and see it😀
I know I'm catching this late, but the reason it was so limey was you put the marinade in the soup. That is really just to season the fish. Typically, it is better to wash the marinade off, because the favors are very strong and concentrated so they will 'soak' into the meat. Typically, the marinade will overpower the dish if used in cooking. Anyway, cool vid.
I'm surprised somebody else hasn't said this yet, about when you're marinating something. You usually just pick the meat out of the marinade and not dump the marinade in also. They usually throw the marinade away.
Yeah, throw marinade away. Specially if it's chicken or pork. Unless you want cross contamination. You can keep it for 2-3 days depending what's it's for. Fish marinade you use it for fish and only fish. Then toss it out. After used. Unless you want to get sick, and die.
Fishing regulations are constantly changing and when in doubt you can always check the state that applies to you. The printed regulation handbooks comes out yearly so spend some time to go over the information carefully. Specific locations, counties and even public piers do have rules that can be easily overlooked. Don't make your fun in the sun outing an unexpected expense. Tight Lines Everyone!
Regulations are insane nowadays. 😡 how did our country get to this point? It seems like they just keep adding new ones every year. Leave home without a regulation handbook and SOMETHING you do will bring you a fine.

I’ve worked in regulatory environments my entire career and understand complex scientific texts etc. but sometimes the fishing regs are insane. I get why they’re doing it - it’s to try and manage the population and future viability of the ecosystem and a particular species - but if there’s fine line details in effect for specific areas they should be mandated to prominently post it in plain English!
People used to fish the bridges near where I lived on Merritt Island, FL, but then the amount of trash left by fisherman got to be such a problem that fishing was banned from many bridges. Abuse a privilege and it will go away.

Cool video. That dish looked really tasty. But when I marinate something, unless the recipe specifically says to add the marinade to the dish, I remove the fish or whatever from the marinade and add it. It'll absorb the flavor of the marinade without being overbearing.
Yeah your spot on, he should take the fish pieces out of the marinade, that way you get the taste in the fish! and it's not taking away from the other ingredients.

Fishing licenses are ridiculous! I understand monitoring whats caught as far as species caught,size,amount,time of the year etc. But having to have a BS license has always been BS to me.
cooking tip: never try a dish for the first time after you've finished it. taste a few times along the way, to make sure progressing as you want. add spice, simmer, taste. initially, put less spice then you think you'll need, then simmer a bit and taste. then go back and add spice/seasoning you think it needs. if you are not sure whether to add or not, smell the spice and see if it smells like you need it or not. tight lines brad!!!
When you marinade/brine something you are supposed to throw the used marinade/brine out. Raw pork, seafood, beef and poultry may contain harmful bacteria which may contaminate the marinade. Marinating should be done in the refrigerator to inhibit bacterial growth. Used marinade should not be made into a sauce unless rendered safe by boiling directly before use; otherwise, fresh or set-aside marinade that has not touched meat should be used. The container used for marinating should be glass or food safe plastic. Metal, including pottery glazes which can contain lead, reacts with the acid in the marinade and should be avoided.
That actually looked more like a curry and less like a soup :) Still delicious though! I never made this actual recipe, but I am an avid home cook that makes as much as possible from scratch: if you're not big on the flavour of lime, you might want to add less lime zest. The juice barely gives any lime flavour, just some acidity. If, however, you did not like the acidity, then you can add a spoonful of (palm) sugar, mix, taste, and add more if needed until the acidity has been cancelled out somewhat by the sweetness :) Cooking, if anything, is mostly a balancing act :) And the other guy had a good point as well: always taste as you're going. Throwing in a whole bunch of spices until your ancestors sing: "That's enough, my child!", is only for when you've gained some more experience with more complex cooking :)

Your ingredient list is such that if you grill some tortillas and make fish tacos instead of soup, you will like it. If it calls for coconut milk, it will be richer and help to dumb down the spice of the peppers if you substitute coconut cream(70% coconut solids)
NM is an extra $10 for Trout stamp. If trout in lake waters best to get it. Onions > Saute until translucent. 😁 Asian recipes call for coconut milk. Usually leftover marinade isn't added.

That’s good to know about the reef endorsement. I never would have thought about it applying to the type of fish, just to fishing over actual reefs. Glad I saw this. I’ve lived in AL all my life but have basically only ever fished freshwater. But I’m about to move to the coast so I’ve gotta Lear these things! Saltwater seems so much trickier!!
We have size limits for sea fish over here in the UK, but sea fishing is free with no licences or permits needed. Fishing from piers is paid for though. Can't believe the guys checking your permits carry sidearms ... what you gonna do ... get whacked for taking an undersized fish !! I hope you thanked him for his service ... lol
Game wardens should be challenged in court. Constitutionally people shouldn't be subject to search of documents or belongings if no crime is suspected, just like on the road.

I lived in Tampa and Treasure Island for a yr and one of guys i worked with they loved snook fishing ,i never fished for them but he told me same thing about catching snook.

Try caramelizing the onions and peppers first then set aside. Lightly saute the fish then add the onions and peppers. Mix and cook for a minute then add your coconut milk.
Another cooking tip that you can follow is to use the 5 basic tastes to help balance the dish (sweet, sour, salty, bitter, and umami). If it feels like too much lime (sour) try balancing with a little sugar.
Game Wardens are usually good hard working folks. They typically shoot the shit for a little while and check your license like the interaction in the video. The fishing community tends to be very helpful to those that are respectful.

Or you could just bring measuring tape and make sure you’re not taking illegal fish. It’s super easy, and it keeps fisheries safe. Red Snapper season is serious business out on the southeast coast, everyone knows the rules who fishes.

Next time take the fish out of the marinade. Don’t throw it in the sauce. Just use what’s been absorbed by the fish and the little bit that’s still on it. That should help. Looked delicious!
Long long long ago when I was very young my dad took me fishing at titusville pier..caught sheephead..yellow tail and blowfish. I'm 68 now and never forgot. Have not been fishing since

I'd dose back the lime juice and maybe nix the zest altogether. Fish will absorb a lot more of those flavors than shrimp will. I'd also recommend browning the fish in the pan, remove it from the pan, and then continue with the onions, garlic, tomatoes, etc. You'll get a lot of good flavor from browning. Also top with some fresh cilantro to help lighten up the flavors. Me personally, I'll also cook the rice with some chicken or vegetable stock and coconut milk with some ground coriander.
I cook rice every day for beans or soup. I cook a pound of rice daily to supplement my 7 dogs’ diet and I always flavor it while it cooks with whatever I am eating currently
Theere is more than one way to cook moqueca. each region here in Brazil slightly changes it I suggest you try moqueca baiana, they use shrimps and a secret ingredient called azeite de dendê, also if you wish to use coconut milk you should try to make it yourself, just take fresh coconut meet and mix with some hot witar on the mixer.
Sheepshead is one of my favorite fish to eat. My ex husband told me that they were trash fish not fit to eat. I should have taken that as a sign…😂😂 I will try this recipe, thanks.
Just an FYI if u like tender fish don't use citrus in your marinade. It firm's up the flesh and actually cooks the fish remember a true cheviche has had no heat, yet is cooked by the acidity in the lime and lemon

Used to buy something on the west coast(NorCal), called chioppino.. I'd buy it by the gallon and eat it up! Never made it my self but it was a fish/seafood chowder or stew, made with tomatoes based sauce. I believe they call it Italian style fish stew. It was to die for!
Cioppino in Italian to chip in. So all the fisherman who had left over catch would throw everything into a big pot. That's was my Grandmother's story anyways.

Last time I was in Pensacola I chartered a boat and took my daughter and her boyfriend out fishing for a day. It was an awesome day but we caught a bunch of red snappers out of season. Almost every time we threw them back, dolphins would zip in and eat them before they could get back down deep. The irony of not keeping them, but feeding the dolphins was frustrating. Want to get down there again, soon.
I'd recommend taking the fish out of the marinade and maybe searing or grilling it before putting into the soup and discarding the marinade. Just a thought
I know that this is an old video, but I’ve got a story to share. I live in Harford County, Maryland and before 9/11 my favorite place to fish was on the catwalks of the Conowingo Dam, which I miss terribly. Their new “fisherman’s wharf” sucks IMHO. Anyway, Rockfish/Striped Bass are a heavily-regulated fish in the Chesapeake Bay, and I mean HEAVILY. The Department of Natural Resources *does not play* around. Many years ago now, when rockfish were at their most regulated you could not keep a rockfish of any size; it was strictly catch and release only. A guy up at the Dam didn’t give a crap about the regulations and he caught like ten or eleven rockfish and threw them into his ice-filled cooler. Well, because the fish were biting so well he kept casting instead of hopping in his vehicle and heading home, and he stayed long enough for the DNR to show up and check people’s licenses and to make sure that people were not illegally keeping rockfish. Once they opened his cooler he was quickly slapped into handcuffs and taken out. My buddy Joe asked one of the DNR police what was going to happen to the guy and he told him that, in addition to being arrested, he was having all of his fishing equipment confiscated, would lose his license and possibly lose it forever, and would be assessed a fine of like either $10k or $50k (I don’t remember which now) PER FISH. They also towed and impounded his expensive Cadillac Escalade. Don’t mess around and find out, or don’t Eff Around and Find Out as the kids say. It’s not worth it at all! If you’re fishing for food, and why wouldn’t you want to eat some tasty fish that are as fresh as fresh can be, do not take fish that are under size or protected, and don’t go over the limit. Brothers and Sisters of the Fishing Community don’t be like that guy!
Some of these regs are really draconian... oh, I can keep this fish. but only if it's a cloudy Tuesday and I am facing south on an outgoing tide...got it!
Have'nt read through the comments and it's nrrn a while. But coccanut milk is the shreaded fiber thats soaked in water and strained, it can be lightly sweetened. It's also the base for curries, carribean and asian dishes. The trick with spices is never overpower anything, too little is better than too much as that can be remedied. Take your time to let flavors blend and work from there. One spice/season can throw eveything off. Citrus is easy to overdo as is sweet/ heat or peppers and everyones had dressing with too much sage added. Lol
I think you were supposed to take the fish chunks out of the marinade before putting it in the soup. I don’t think you were supposed to dump the marinade the fish was in into it. I basically made the exact same mistake with a very similar recipe with similar results.
My Stepdad and I were fishing for flounder the other day and I hit a 16" red snapper and made a point of showing it to Tony. I totally have a witness to my first legal reddish catch, but he slipped away on the way back to the boat. I haven't coughed a sheep's head on dauphin island in years, but I do miss eating them
For those of us who aren't familiar with saltwater species, PLEASE clearly identify the fish, how you identify it, and whether they're good to eat or not. Please. You did some of that later including the regulations ALSO very important glad you do such thorough work.
I cooked a gator and shrimp stew (which really is a green gumbo- no flour and oil roux. )It said to soak the gator only in lime juice. Make sure you rinse off the lime juice before you sauté it. I impressed myself with that internet recipe!

I would have left out the lime zest as zest of anything is rly potent. Either leave out the zest or do less of it (I've never made this but off the top of my head I'd add like a teaspoon at most) A teaspoon if you really like lime
I’ve never heard of only being able to keep certain fish during certain days of the week. I’ve also never fished in the ocean or anywhere other than Illinois and Minnesota.
In most countries outside of the US, "soup" is synonymous with stew or curry. The brothier soups are usually called "bullion". Cooking is an art, not a science for sure. I follow my heart and pallet, and use a recipe only as a suggestion. I would have picked the fish from the marinade and put in the soup and discarded the marinade. Zest is over rated as it looks cool when doing, but usually not necessary if you already using the juice from the fruit. Nice video and great to see the theme of "farm to table"or in your case, "sea to table" ☺️
The extra line taste came from the marinade, next time just add the fish and leave the marinade out. First time watching your channel and loving it. Maybe one of these days I'll get a Chávez to fish there!
I’m glad I fish outside the U S, and boat is registered in Vanuatu. The US is the only country that enforces the Gulf Coast Fishery Treaty. Easy to spot U S Snapper boats by all of the small Snappers floating belly up down stream of the boat.
Good recipe!!! You can get wrong with coconut milk or cream. Too much acid like citrus , lemon, lime or even vinegar can prematurely cook the fish. There a recipe using any type of acid for 30 minutes. Just addd garlic, onion, ginger black pepper and salt and dice fish meat. The longer it soak in the acid the more it get cook the fish meat. And less fishy taste.
Hey Brad, Dude? What the hey, whenever you make (ANY) fish soup, with any kind of fish, shrimp, oysters, etc. You always save the fish out for last, wait until the soup is almost done and add the fish in just long enough to cook it, so it doesn't cook to pieces... Cheers Mate...
I would not feel comfy giving a cop my phone. That's why I don't fish or boat in the US the tax collecting is out of control and takes the relaxation away from the hobby.

As a new fisherman to saltwater my worst fear is to catch something similar to a legal fish and get busted and get a fine.
That fear is from knowing you are actually a slave and not free.
OR, as helpful advice.Read the rules,go online and memorise pictures of legal fish(print them out if reqd).Have an accurate measure.

Hi Brad, normally you do not add the brine to the dish. That brine is to marinade the fish, meat only.

Yeah, throw marinade away. Specially if it's chicken or pork. Unless you want cross contamination. You can keep it for 2-3 days depending what's it's for. Fish marinade you use it for fish and only fish. Then toss it out. After used. Unless you want to get sick, and die.
Fishing regulations are constantly changing and when in doubt you can always check the state that applies to you. The printed regulation handbooks comes out yearly so spend some time to go over the information carefully. Specific locations, counties and even public piers do have rules that can be easily overlooked. Don't make your fun in the sun outing an unexpected expense. Tight Lines Everyone!

I’ve worked in regulatory environments my entire career and understand complex scientific texts etc. but sometimes the fishing regs are insane. I get why they’re doing it - it’s to try and manage the population and future viability of the ecosystem and a particular species - but if there’s fine line details in effect for specific areas they should be mandated to prominently post it in plain English!

People used to fish the bridges near where I lived on Merritt Island, FL, but then the amount of trash left by fisherman got to be such a problem that fishing was banned from many bridges. Abuse a privilege and it will go away.

That dish looked really tasty. But when I marinate something, unless the recipe specifically says to add the marinade to the dish, I remove the fish or whatever from the marinade and add it.
It'll absorb the flavor of the marinade without being overbearing.
Yeah your spot on, he should take the fish pieces out of the marinade, that way you get the taste in the fish! and it's not taking away from the other ingredients.

Fishing licenses are ridiculous! I understand monitoring whats caught as far as species caught,size,amount,time of the year etc. But having to have a BS license has always been BS to me.
cooking tip: never try a dish for the first time after you've finished it. taste a few times along the way, to make sure progressing as you want. add spice, simmer, taste. initially, put less spice then you think you'll need, then simmer a bit and taste. then go back and add spice/seasoning you think it needs. if you are not sure whether to add or not, smell the spice and see if it smells like you need it or not. tight lines brad!!!

I’d say that the overpowering taste of lime is because you tipped the marinade in with the fish instead of just adding the fish by itself.
When you marinade/brine something you are supposed to throw the used marinade/brine out. Raw pork, seafood, beef and poultry may contain harmful bacteria which may contaminate the marinade. Marinating should be done in the refrigerator to inhibit bacterial growth. Used marinade should not be made into a sauce unless rendered safe by boiling directly before use; otherwise, fresh or set-aside marinade that has not touched meat should be used. The container used for marinating should be glass or food safe plastic. Metal, including pottery glazes which can contain lead, reacts with the acid in the marinade and should be avoided.

That actually looked more like a curry and less like a soup :) Still delicious though! I never made this actual recipe, but I am an avid home cook that makes as much as possible from scratch: if you're not big on the flavour of lime, you might want to add less lime zest. The juice barely gives any lime flavour, just some acidity. If, however, you did not like the acidity, then you can add a spoonful of (palm) sugar, mix, taste, and add more if needed until the acidity has been cancelled out somewhat by the sweetness :) Cooking, if anything, is mostly a balancing act :) And the other guy had a good point as well: always taste as you're going. Throwing in a whole bunch of spices until your ancestors sing: "That's enough, my child!", is only for when you've gained some more experience with more complex cooking :)

I think what made the dish a little over powering was you should have drained the Marinade before adding the fish to the dish.
Your ingredient list is such that if you grill some tortillas and make fish tacos instead of soup, you will like it. If it calls for coconut milk, it will be richer and help to dumb down the spice of the peppers if you substitute coconut cream(70% coconut solids)

We have size limits for sea fish over here in the UK, but sea fishing is free with no licences or permits needed. Fishing from piers is paid for though. I lived in Tampa and Treasure Island for a yr and one of guys i worked with they loved snook fishing ,i never fished for them but he told me same thing about catching snook.
Thoroughly enjoyed the video, especially the cooking event. As a native Floridian that transplanted into the great northwest, I really miss sheep’s head!
Try caramelizing the onions and peppers first then set aside. Lightly saute the fish then add the onions and peppers. Mix and cook for a minute then add your coconut milk.
Another cooking tip that you can follow is to use the 5 basic tastes to help balance the dish (sweet, sour, salty, bitter, and umami). If it feels like too much lime (sour) try balancing with a little sugar.

Next time take the fish out of the marinade. Don’t throw it in the sauce. Just use what’s been absorbed by the fish and the little bit that’s still on it. That should help. Looked delicious!

I'd dose back the lime juice and maybe nix the zest altogether. Fish will absorb a lot more of those flavors than shrimp will. I'd also recommend browning the fish in the pan, remove it from the pan, and then continue with the onions, garlic, tomatoes, etc. You'll get a lot of good flavor from browning. Also top with some fresh cilantro to help lighten up the flavors. Me personally, I'll also cook the rice with some chicken or vegetable stock and coconut milk with some ground coriander.

I cook rice every day for beans or soup. I cook a pound of rice daily to supplement my 7 dogs’ diet and I always flavor it while it cooks with whatever I am eating currently
Theere is more than one way to cook moqueca. each region here in Brazil slightly changes it I suggest you try moqueca baiana, they use shrimps and a secret ingredient called azeite de dendê, also if you wish to use coconut milk you should try to make it yourself, just take fresh coconut meet and mix with some hot witar on the mixer.
When I was in USAF in 70s in FL you didn't need a license for salt water and i don't remember fish limits but i fished fresh water.

Just an FYI if u like tender fish don't use citrus in your marinade. It firm's up the flesh and actually cooks the fish remember a true cheviche has had no heat, yet is cooked by the acidity in the lime and lemon

Used to buy something on the west coast(NorCal), called chioppino.. I'd buy it by the gallon and eat it up! Never made it my self but it was a fish/seafood chowder or stew, made with tomatoes based sauce. I believe they call it Italian style fish stew. It was to die for!
Cioppino in Italian to chip in. So all the fisherman who had left over catch would throw everything into a big pot. That's was my Grandmother's story anyways.

Last time I was in Pensacola I chartered a boat and took my daughter and her boyfriend out fishing for a day. It was an awesome day but we caught a bunch of red snappers out of season. Almost every time we threw them back, dolphins would zip in and eat them before they could get back down deep. The irony of not keeping them, but feeding the dolphins was frustrating. Want to get down there again, soon.

I know that this is an old video, but I’ve got a story to share. I live in Harford County, Maryland and before 9/11 my favorite place to fish was on the catwalks of the Conowingo Dam, which I miss terribly. Their new “fisherman’s wharf” sucks IMHO.
Anyway, Rockfish/Striped Bass are a heavily-regulated fish in the Chesapeake Bay, and I mean HEAVILY. The Department of Natural Resources *does not play* around.
Many years ago now, when rockfish were at their most regulated you could not keep a rockfish of any size; it was strictly catch and release only. A guy up at the Dam didn’t give a crap about the regulations and he caught like ten or eleven rockfish and threw them into his ice-filled cooler. Well, because the fish were biting so well he kept casting instead of hopping in his vehicle and heading home, and he stayed long enough for the DNR to show up and check people’s licenses and to make sure that people were not illegally keeping rockfish.
Once they opened his cooler he was quickly slapped into handcuffs and taken out. My buddy Joe asked one of the DNR police what was going to happen to the guy and he told him that, in addition to being arrested, he was having all of his fishing equipment confiscated, would lose his license and possibly lose it forever, and would be assessed a fine of like either $10k or $50k (I don’t remember which now) PER FISH. They also towed and impounded his expensive Cadillac Escalade.
Don’t mess around and find out, or don’t Eff Around and Find Out as the kids say. It’s not worth it at all! If you’re fishing for food, and why wouldn’t you want to eat some tasty fish that are as fresh as fresh can be, do not take fish that are under size or protected, and don’t go over the limit. Brothers and Sisters of the Fishing Community don’t be like that guy!
I don’t like treble hooks and I used barbless hooks . Saves a lot of trouble releasing fish .
coconut milk is an opaque, milky-white liquid extracted from the grated pulp of mature coconuts.
Some of these regs are really draconian... oh, I can keep this fish. but only if it's a cloudy Tuesday and I am facing south on an outgoing tide...got it!
Have'nt read through the comments and it's nrrn a while. But coccanut milk is the shreaded fiber thats soaked in water and strained, it can be lightly sweetened. It's also the base for curries, carribean and asian dishes.
The trick with spices is never overpower anything, too little is better than too much as that can be remedied. Take your time to let flavors blend and work from there. One spice/season can throw eveything off.
Citrus is easy to overdo as is sweet/ heat or peppers and everyones had dressing with too much sage added. Lol

I think you were supposed to take the fish chunks out of the marinade before putting it in the soup. I don’t think you were supposed to dump the marinade the fish was in into it. I basically made the exact same mistake with a very similar recipe with similar results.

I cooked a gator and shrimp stew (which really is a green gumbo- no flour and oil roux. )It said to soak the gator only in lime juice. Make sure you rinse off the lime juice before you sauté it.

In most countries outside of the US, "soup" is synonymous with stew or curry. The brothier soups are usually called "bullion". Cooking is an art, not a science for sure. I follow my heart and pallet, and use a recipe only as a suggestion. I would have picked the fish from the marinade and put in the soup and discarded the marinade. Zest is over rated as it looks cool when doing, but usually not necessary if you already using the juice from the fruit. Nice video and great to see the theme of "farm to table"or in your case, "sea to table" ☺️

The extra line taste came from the marinade, next time just add the fish and leave the marinade out. First time watching your channel and loving it. Maybe one of these days I'll get a Chávez to fish there!

I’m glad I fish outside the U S, and boat is registered in Vanuatu. The US is the only country that enforces the Gulf Coast Fishery Treaty. Easy to spot U S Snapper boats by all of the small Snappers floating belly up down stream of the boat.

Good recipe!!! You can get wrong with coconut milk or cream. Too much acid like citrus , lemon, lime or even vinegar can prematurely cook the fish. There a recipe using any type of acid for 30 minutes. Just addd garlic, onion, ginger black pepper and salt and dice fish meat. The longer it soak in the acid the more it get cook the fish meat. And less fishy taste.

Hey Brad, Dude? What the hey, whenever you make (ANY) fish soup, with any kind of fish, shrimp, oysters, etc. You always save the fish out for last, wait until the soup is almost done and add the fish in just long enough to cook it, so it doesn't cook to pieces... Cheers Mate...
