Great idea. What type of pellet flavor (wood) did you use, or does it matter? Also, have you smoked nuts before, seems like it would probably be the same process.
The pellets are oak, hickory, and mesquite. I have never done nuts but I bet would come out fantastic. I would start with 1 hour for smoke to test. Thanks for watching.

I've got an old gas grill that I took the dead burners out of. It is my cheese smoker. Sometime I'll use the side box smoker if outside temp is getting warm. I also cut the blocks into club cracker sized chunks.
Thanks for the great video! I have the same setup as you (pit Barrell and smoking tube). However, I live in warm climate. Any tips on keeping barrel temp down? Thought about putting ice tray in barrel but not sure exactly where.
I’ve had great luck using a heat gun to light my smoker tube. I love giving smoked cheese away for Christmas.

Put them vertical. Or stock with second grill.

It’s just a food saver we got a long time ago. Works good for this.
where do you get the Tillamook blocks that size?
I get them at Costco. I also live about an hour and a half from where it’s made.

Id assume that after you vac seal it & let it rest in the fridge for 3 weeks you can freeze what you're not going to eat right away

You could put a tray of ice on the rack then elevate the cheese over the ice. Or maybe smoke it at night. Maybe its cooler then?
