    We visited a cranberry farm in UP MIchigan and the recipe the farmer gave me was 1,2,3. 1 cup water, 2 cups sugar, and 3 cups cranberries. I also use a little cinnamon. Turns out great, and so easy.

    Someone propably mentioned this tip, but you can prevent the foaming pot from boiling over with a simple wooden spoon. This is true for potatoes, beans, jams and anything else starchy that builds up foam when it is boiling.
    Simply place a wooden spoon across the top of the pot (obviously use one that's longer than the pot's diameter).
    If the foam builds up and starts 'climbing', the spoon will break the surface tension, and the foam and it will prevent it from bubbling over entirely.

    I’m very happy to have small hands/wrists that fit in regular mouth jars😊. Just bought 29 lbs of potatoes to can. Just 2 of us, so it will last a bit. I also canned carrots last year and found I liked them in veggie soups and such. I also boil some up to make caramel carrots (with butter and brown sugar), but those I vacuum pack and freeze. Any time I vacuum pack “stuff” with liquid, I always pre-freeze them and vacuum while frozen. That way I’ve eliminated the seeping of the juices.

    Another point regarding the tomatoes and botulism is tomatoes are high acid, which does prevent botulism from growing which is why they don't require a pressure cooker and can be safely canned in a water bath canner. To be absolutely sure when I make canned tomatoes or tomato sauce I always add a Tbsp of lemon juice to increase the acidity, it may not be needed but it doesn't hurt either. And of course you can use the pressure canner as well if you have one and want to be extra safe. I have both types but just use the water bath method for tomatoes with the extra lemon juice and in 20 years have never had any trouble with any of my home canned products.

    Another difference between what our grandparents did and now, is that it used to be expected that foods were boiled for 10 minutes before eating. Now we simply heat and eat.

    I canned potatoes last year. They taste so much better than store bought canned potatoes. Your right, easy when making meals. Worth the time.

    Chelsea, thank you again for your fantastic videos! I wanted to let you know about something. I was shopping this morning for some cranberries, as some stores are out of them. To my surprise, Walmart is about the only I can find that has some, and they have organic ones! I then did a search on the internet about how much regular cranberries have chemicals. I found out, “they have the highest dietary risk index among domestically grown fruits due to the number and toxicity of chemicals used in their cultivation, including chemicals like chlorpyrifos, which is considered a known endocrine disruptor; therefore choosing organic cranberries is often recommended if concerned about chemical residue.” And “organic cranberries have higher levels of antioxidants.” I also thought you would want to know about a product called AquaPure Pesticide Purifier (for produce). It’s rated as the number 1 vegetable washing purifier. I got mine from HSN. Have a blessed and safe New Year!

    In addition the time is much less than water bath canning. Being on propane which can be expensive these days, the time difference in cooking and speed of getting through batches is important too!

    I just got an electric pressure canner and one of the first things I canned was potatoes. They are absolutely delicious!! I've had to hide the last jar from my youngest who is a potato monster 😂

    AGE OF TRAILER
    Back in the day, in the States, you could look at the tail light covers if they were original and get the year. The manufacturer used the last two digits of the year. 1958 would be 58. It should be molded into the plastic and slightly raised. Best of luck!

Great video, you are so calm when canning, I get a bit panicky but I'm working on tha..t.🤣You are the second person I've seen using a pc as a steam canner and I so want to use that option. Need to get some written instructions together, I work best like that. Cranberries looked awesome. I have been without a gas cooker for over a month due to a breakdown but 🤞🤞🤞we have a new one this weekend then I have QUITE a lot of canning planned.👏👏👏.x

    My cranberry sauce recipe has me take seeds out of oranges and blend whole in food processor and cook with cranberries and sugar. Plus cinnamon sticks and hunk of ginger.
    The trailer should have a metal mfg plate on left corner front.

    I bought a round brush from the bathroom section for cleaning regular mouth jars. It works great and it never goes anywhere except under my sink for storage! :)

    I have been canning for years, just kinda winging it lol. We have never gotten sick. This year I bought the Bernadin canning book and read through it. The only mistake I was making revolved around cool vs hot jars, explained why I would always have a couple broken jars in my canner. Lol. I have pressure canned this year and thoroughly loved it. Electric canner is in my Amazon cart, hoping the price goes down! Love you talking about the process.

    Hi Chelsea, you mentioned you love the orange flavour in cranberry sauce, I always add the orange zest (or clementine) to the sauce for an extra orangy flavour. My recipe is almost the same as yours :)

      I chop up the orange into bite sized pieces, skin and all, and cook it along with the cranberries! We plan to try grapefruit this year.

    Hi Chelsea, nice to see you again! I finished Canning my 23kg Potatoes. They look so good! I have a strange looking knife that leaves a wavy edge on the cut sides. I had some beautiful long potatoes and cut them in half length wise then quartered and more as needed. They look so good and taste even better! I’ve been eating out of my Canning pantry from stuff I canned last year. I had Huli Huli Chicken with rice, not canned! Then the next night, I made Pork Roast and a pint jar of potatoes. Oh my goodness! It was delicious!
    I also canned up Split Pea Soup. I had about 8 lbs of peas and adjusted the recipe for that amount. I have 3 cases of pints, 2 quarts and 2 12oz jars. I think that will be enough for me and my brother, and the neighbors and everyone online and…
    I haven’t canned the Navy Bean Soup yet but it will not be near that quantity. I canned 12 quarts of Beef Stroganoff and my house still smells like the beef, yummy!
    Good luck with the potatoes, I did have some siphoning in several jars. Not sure why some did and others in the same batch didn’t! They still taste great!

    Botulism isn't something I care to mess with. When canning season approaches, I keep my eyes peeled for updates to the Ball Blue Book and respect that I'm a home cook and not a food scientist. They do the hard work, and I just follow their tested recipes and rest assured that my food is safe.
    Having said that... Peeling tomatoes is a huge pain in the tuckus!

    Very well explanation of your process.
    I've learned canning/cooking/baking from my mother (born 1934).
    However I enjoy different parts of vegetables then she does.
    The peelings are worth more in taste/flavor/texture to me, then the rest of potatoes and carrots combined.
    I will scrub but never peel root vegetables.
    When she peels potatoes, i fry the peelings for breakfast.
    At 89 she has canned nuts,reg/wheat/banana/zucchini breads and are delicious up to 5 months...haven't tried it longer then that.

    Hello 'Martha'. Bet she'd love to meet my 'Hot Stuff' LOL I, too, use my pressure canner for water bathing because I went through so many of the granite canners. For the potato foaming, I use a fine mesh skimmer (with handle) from Lee Valley to remove the foam and that stops boiling over messes.

    We love our canned potatoes, have them every morning for breakfast 😋. I'm just too lazy to peal them and I just raw pack mine. I do however soak them overnight (it helps removing some starch) with a bit of vinegar. My Hans fit in the regular mouth jars 😂. I do my own research and use common sense 😉

    Bunkie: I have often dreamed of a " tiny house" community for adults with ASD/ Developmental Disabilities. Modeled after communities for veterans/ homeless...but with a " sweat equity" component. You help someone else build thier house, they help build yours, you can either take it WITH you ( parents property/other) OR you move it to a small piece of land IN the community.... really create a community. Because they are tiny, so MUCH easier for ALL to maintain, not overwhelming. Unfortunately our state has regs that wouldn't allow it....maybe in the future....❤Some might like the privacy and freedom of tiny houses...vs..only other option, group homes/apartments, often in downtown areas.

    Hi Chelsea. I so look forward to your videos. I only watch when the dishes are done and I am settled in for the night. I was working in my cold room today and I have some of my potatoes in desert hill boxes and they make me smile whenever I walk in there. That happy face on the lid is so cute. James built me metal free standing shelves that sit over top of my jars so it doubles my storage now. I am so thankful and thrilled to have more room.     It does boggle my mind a bit that things get cooked, jarred, then have to spend so much time in the canner. How have the nutrients and texture not been totally destroyed? It makes sense to me to can from a preserving POV, but totally illogical from a food quality one. My mind always wants a duvet day on the subject lol

    I love your videos. I was wondering why you don't use your wood cook stove more when it is cool outside. That would allow you to do more canning using the wood cook stove in addition to the kitchen stove. You might not want to run the canners on the wood cook stove, but you could do some of the other cooking on it. Just a thought. Thanks.

    I just invested in my 2nd Tramontina stainless pot-made in canada! The heavy gauge bottom is a must during preserving season. Love these pots. As always Chelsea your are a source of inspiration and knowledge. thanks friend.

    I don’t like canned carrots either but, they do make a good carrot soup, quick and easy and I like to add whipping cream for a creamer soup!

    I am watching from Bavaria, southern Germany and like you and your videos a lot!! Canning potatoes, however, is totally uncommon here. We store our potatoes in a side room of the garage, if winters are not too cold, and they are wonderful till spring next year.
    Couldn't you store them in your root cellar? It might be better concerning vitamins etc.
    Nevertheless, it is always very interessting to watch and I enjoy it enormously!🙋

    My adult nephew got a terrible case of Botulism from consuming Unpasturized Apple Cider that was not refrigerated, while the pasturized one was! This was at a Cider market! He became temporarily paralized etc. while driving on a trip. He survived.

    Tuke...I grew up in NYState, called it a ski cap, or watch cap (my Dad was former navy), my husband raised in the South with Indiana/NJ parents called the cap a Toboggin (no lie, we lauged and laughed at that...we used real Toboggins to go down big snowy hills. I follow another Canadian farmer (Ontario) who calls her cap a different name.

    I think my wife would enjoy the organization portion and i like prepping it for her. However I am still scared to can. However I am going to grow my first batch of potatoes this year so i hope they come out great. I do live in Texas so should be good

    I don't peel my tomatoes for canning sauce either. I blend my tomatoes then boil them down for a few hours until I get the consistency I want. I add lemon juice to my jars before canning I have never had a problem. I love that you give us so much information about everything keep up the good work my fellow bc friend

    Psst. My canning confession: I re-use canning lids. 😃And sometime I can in a commercial jar (with a sellable lid), is a cleaned out jam or pickle jar. 😃

    My mother canned, which is how I learned. She changed how she canned over the years as rules changed. She also NEVER ate anything that anyone else canned. She said you never know their practices and safety standards. Which I have always agreed with. Just like we always washed out chicken in salt water and our fresh picked/store bought veggies in salt water. Poultry board in the US and CDC recommend not washing chicken to lessen spreading salmonella around your kitchen. Times changes, so must we to a degree.

    My mother and I were walking in a very old cemetery years ago and saw a series of family graves--parents and children of all ages. (The dates were before the Spanish flu epidemic.) I asked her what could've led to so many deaths in one family, and she said botulism often led to many deaths around that time.

    Clostridium is not the only sporeformer that can grow in potatoes, also Bacillus cereus can grow ther if it's not canned properly. And the Bacillus cereus toxin is not heat resistant!

    I just vanned cranberry jam with oranges and apples. It's soo good. I also did cranberry sauce which is so much better than the can stuff you buy in the store,

    Hey Chelsea, love your videos, I've learned alot from watching your channel, I have just started out canning this summer, I'm in zone 4b in Northern Ontario. I seen that your potatoes were about to boil over, one thing my grandma taught me to stop that is to put a little pat of butter in the water just before boiling point, works every time. I can't wait to see your pantry tour, love watching them and everything you've accomplished.

    I pressure can everything. Just makes me feel more comfortable. I peel my potatoes. But the fist year I did them. I didn’t par boil them and I water bathed them. Every jar unsealed within a couple days. So I learned lol. Practice Practice Practice. I say. Love your channel and your insights

    Cover your pot with the lid & it will boil faster cause the water vapor can’t escape & evaporate.

    I like to use my canned potatoes with canned green beans and a tablespoon of bacon grease and bacon bits. A great side dish.
