It says nothing on the comment about seasoning the water to not make pasta stick. Lizzie is right, the water must always be seasoned, you won't catch any italian out there cooking pasta un unsalted water and this is an issue I've had multiple times in the UK, unseasoned italian food...
i'm italian and i am not triggered by this variation of carbonara. I don't really see the benefit of adding garlick but i can live with that, good job guys!

Finally a carbonara recipe from English people with no cream! The melted Parmesan is what makes people think it's creamy! I learnt this recipe from the best, straight from my Italian friends :)
doubled the recipe to feed 4 adults and only used chicken sausage. still turned out tasty and was appreciated by all. I didnt have any bacon which I'm sure would have made it better. Thanks for the awesome recipe.
Guys I was so happy knowing this channel , it proves that british people know how to eat well, then you put parmesan instead of pecorino in a carbonara (i know that you are revisiting and it's fine,just joking here). I don't wanna give you the impression of the classic italian guy that goes mad if you change a little bit his favorite dish, but after that you did the classic stereotypical thing : throwing pasta against the fridge for testing if it's cooked enough , and you are saying it as an advice in a "cooking class". I can't believe you actually didn't think about a third method (for quoting your channel "i'm not a chef i'm normal" and i think everybody would) just tasting it : doing this ways you will know not only if it's cooked enough but also if the pasta need more salt .
I know the traditional is pecorino, but I think they replaced it with parmesan because it's more available and cheaper, at least where I live. About the pasta, yeah, they showed that method, but they mentioned another one and, if you check nowcookit, they have a video on boiling pasta that shows a few different methods on how to check if it's cooked :)
I don't know much about the finer points of Italian cooking so I'm not gonna comment on that but just saying, you truly did a fine impression of the classic Italian guy that goes mad if you change a little bit of his favorite dish :) I hope things/times aren't that hard YET such that every person on TH-cam has to put up a flashing neon sign that this is their 'interpretation' of so-and-so dish each time they post a cooking video, just to preserve someone's outraged sensibilities.

Made this one yesterday and it was so simple but delicious ^^ The only difference is that I didn't have sausages and instead used more bacon and I had fresh pasta :D But definitely something I will cook again in the future
i have 1 of those as seen on tv pasta bowls that i can just put my pasta noodles or macaroni in add the water an put in the microwave an cook for about 8 to 9 minutes can i do this instead of using the stove ? also same thing for the sausage and bacon can they be cooked in the microwave instead of the stove ?
The first Time I made carbonara I thought that I should use the egg whites instead of the yolks and then halfway through I found out so I added the yolks and the whites together 😅 I remember that it tasted good though

Good question. I'd probably do it in a pan and add a little more water to prevent it catching on the bottom, the water should evaporate a little by the time it's heated up to give a silky sauce again!
Ana Carolina Hard, aged cheeses like Parmesan actually have almost no lactose. Unless you're really sensitive, you might be able to enjoy the recipe as is.
That does look amazing! Have you ever heard of the method where you lay the raw egg yolk on the hot pasta and mix it in really quick? That's my favorite way to ear carbonara ^_^
Cassie Moloney you could try with egg replacer, nutritional yeast and vegan bacon...but i doubt that all of those would taste overly good 😂 i think carbanara may be best left to the omnivores 😉

Is there any trick to getting over the thought of the raw egg? :S

love the idea, but wish you had something to focus on ppl with very little space and almost no gadgets... 3 roughly 2'x2' counters, a slow cooker, a few pots, pans, and skillets, and a couple of baking dishes. not all non-stick, not all anything except well used by now. frozen foods, dried and/or canned foods, and low budgets. you started out low-budget, so far as i can tell from what i've seen. healthier than ramen, cheaper than going to fast food... And my son will need such recipes next year, when he starts college!

Putting litres of pasta water into a bowl to extract one tablespoon of it. I guess it'd be possible to take that spoon from the pan itself ;-).
