    Make the Seasoned Sweet Soy Sauce
    265 grams (1 cup) of regular light soy sauce (Amazon Link - geni.us/light-soy-sauce)
    240 grams (1 cup) of water
    71 grams (1/3 cup) of brown sugar (Amazon Link - geni.us/brown-sugar)
    1 dried shitake mushroom, cut into small pieces (Amazon Link - geni.us/dried-shiitake)
    3 slices of ginger
    a shallot, thinly sliced
    1 scallion
    4-5 cilantro leaves
    1 small stick of cinnamon (Amazon Link - geni.us/dried-shiitake)

    1 piece of bay leave (Amazon Link - geni.us/bay-leaves)

    Make the Sichuan Hot Chili Oil (油泼辣子)
    280 grams (1.25 cups) of cooking oil (Amazon Link -)
    1 scallion
    3 slices of ginger,
    2 cloves of garlic, sliced thinly
    1 cinnamon stick (Amazon Link - geni.us/dried-shiitake)

    2 tsp of Sichuan peppercorn powder (Amazon Link - geni.us/sichuan-peppercorns)
    1/2 cup of mild chili flake (Amazon Link - geni.us/red-chili-powder)
    1.5 tbsp of spicy chili flake (Amazon Link - geni.us/chili-flake)
    1.5 tbsp of raw sesame seeds (Amazon Link - geni.us/raw-sesame-seeds)
    1/2 tsp of salt
    1 tbsp of Chinese black vinegar (Amazon Link - geni.us/chinese-black-vinegar)

    Make the Roasted Nut Powder
    40 grams (1/3 cup) of roasted peanut
    2.5 tbsp of roasted walnut
    1.5 tbsp of roasted sesame seeds (Amazon Link - geni.us/white-sesame-seeds-w)
    Make the Garlic Water
    4 cloves of garlic
    1/4 cup of water
    Make The Sea Weed Soup
    940ml (4 cups) of chicken stock (Amazon Link - geni.us/chicken-stock)
    70 grams (2.5 oz) of bean sprouts
    6 grams (1/2 cups) of dried seaweed
    1 tsp of salt
    Others:
    1 package of Yacai (diced pickled mustard green), about 5 oz (Amazon Link - geni.us/sui-mi-ya-cai)
    2-3 scallions, diced
    A bunch of cilantro leaves, diced
    Replacement Tips
    Sui Mi Ya Cai (碎米芽菜) is preserved and minced mustard green. It has a crunchy texture, a nice fermented flavor, and an umami taste. By the way, if you don't have access to Yacai, you can use some finely diced kimchi or other pickles.
    Alkaline Noodles take a lot of effort to make. If you don't have time, fresh egg noodles or ramen noodles are great replacements.

    Soda ash (sodium carbonate) is really easy to make at home. Just spread out some baking soda in a baking pan or on a sheet tray and bake it at 250 degrees Fahrenheit for one hour. Let it cool before transferring it to an airtight container. It stores just like baking soda.

      @@angko-pe it is a strong base and can burn you. There are no fumes, the sodium bicarbonate decomposes into sodium carbonate + water + carbon dioxide

      Spending a few hours in preparations and dozens of ingredients, for a bowl of noodles? With all respect, it should taste like a tears of gods, to be worthy of such effort. Like, noodles and pasta in general are kinda meant to be quick and easy to make in the first place.

      When I see a recipe that says "quick" or "easy" or "only three ingredients" or claims that if you don't have an ingredient just leave it out, I don't go any further. I want to know how to do it correctly. This is a recipe that could probably have been abbreviated to gain more followers, but Mandy gives us the full-tilt-boogie recipe because she does thing right. I came back to this recipe which I had quickly noticed this morning thinking I would make it, but it is too long for today. Thankfully, Mandy has many recipes that are easier while still being correct. I'll make one of those udon noodle recipes today and save this wonderful looking recipe for the near future when I have planned my time better.

      This is what makes her my go to for Chinese recipes. I have yet to find another cooking channel that explains recipes so thoroughly. She explains the origin of their name, the cookware you should use, alternate methods, common ingredient substitutes, exact weights, exact times, the reason why she's doing it her specific way, how to do it differently for similar results, which parts are worth doing from scratch, which parts you can buy off the shelf stuff for, which parts matter most for the flavour and which are just for appearance, complete ingredients in the description formatted in an easy to read way, tips for making the process easier. And every time I try one of her recipes it turns out better than almost all of the Chinese restaurants I have near me.
      I would kill for channels that explain other cuisines the way she explains Chinese. Please, someone recommend me a channel that teaches Mexican, Cajun, Vietnamese or Thai cooking the way this girl does.

      Mandy is one of the small handful of TH-cam chefs who know the science behind what she is saying. Too many (most) just know what they have learned from other TH-camrs and this leads to a lot of bad information become internet fact.

    The tip to dust your noodle sheets with cornstarch helped me so many times! I had used regular ap flour to dust the pasta sheets and stacked them together in preparation of cutting them to size. Within 10 minutes, all of the sheets had fused together in a glob and I had to start over. I was so upset! But now that I use cornstarch, I haven’t encountered a problem of sticky dough.

    The wife and I spent the afternoon making this entire recipe from scratch. It is delicious, exotic and very intense. Making the sweet soy condiment has made our house smell like the best kind of restaurants in China Town. We are looking forward to more recipes using the chili oil, sweetened soy, black vinegar, and sichuan pepper as we have a lot of those ingredients now.

    I was never disappointed with those noodle dishes in Sichuan. A spoonful of this a spoonful of that and several spoonful of something different - delicious. I always have home made Chili oil, Onion oil and sweet thick soy sauce in my pantry :-) a dish is quickly assembled. Once in a while I make a batch of 5 (13) spice powder. Lithospermum root is something new to me.

    This one is definitely going on my list! I can just see how delicious it will be! My partner doesn't really like the flavor of Sichuan peppercorn (which makes me very sad because I love sichuan cuisine), but I'm going to make it anyway because YUM!     This has a ton of ingredients and looks a bit complicated to make but I will definitely try it this weekend. I am sold on crushed nuts mixed with noodles drenched in a seasoned chili oil. Win win combination. Glad I get to make something very authentic

    I appreciate learning you make noodles but I’d appreciate a long video on how to use grocery store noodles. Here in Cleveland, OH we have a great selection of dried and frozen noodles. The selection is daunting and so varied.

    I finally learned to make this noodles.
    Every time I use to make it. I would get the recipe right. But the noodles would come out soggy. I finally was able to make the noodles come out just right. Even my son was able to eat it this time 😂
    I'm always subconscious on trying New recipes instead of my own cooking 😂. Cause I always want to come out perfect on the first try. I hate when I have to try to something a dozen times to get it right. It's a waste of my time. When I could of been enjoying a good meal.

    Hi - in Taiwan, if noodles or bobo (or anything) is chewy, they refer to is as "QQ" (pronounced, "Kew-kew", and often written, even in Chinese, as "QQ"). I'm just curious - has that term made its way into Mainland China yet?
