The timing of this video is perfect. I just purchased my first Water Sprite / Cliff tea from a tea shop.... How many grams do you recommend adding to a Gawain? and How long would you recommend the first steep and subsequent steeps?
Typically 5 or 6 grams in the average gaiwan. Quick rinse, then somewhere around 15 seconds for the first steep. Add 5 seconds for each additional steep. But play around with the parameters!
I like my cliff tea quite bold, so I recommend starting with 6 grams and moving up to possibly 8 grams. Temperature is just as important as time steeped! Make sure its 95c, start with 20 seconds first brew and add time after the 4th or 5th brew. Enjoy!

Is Wuyi Cliff Tea the only one you are supposed to double slurp with? If not what are some others that require this technique?
