So, I prepare a pretty large amout of concrete mix and pour it on my mold which I put on a balance to weigh it
Or When I unmold I weight the container
Then I calculate how much water and powders I need ;)

Why do u sand it all over? I only sand the bottom, doesn't it change the texture?
