Thanks for this great tutorial ! Please tell me, does time when one big ball is for 2-10 hours in bowl add up to this 24h in RT in calculator ? Or should I only consider time when small balls are fermentating ?

Thanks for your comment! Since the app calculates yeast activity based on the amount of yeast, fermentation times, and temperatures, it takes into account the entire fermentation process. So, the time the dough spends in one large ball (before dividing it into smaller balls) does count towards the total 24-hour proofing time.
