I'm not familiar with this audio problem you're talking about. I believe I used MAME 0.132 for this video, but I would think a newer version would be just as good. Also, this is the standard version of Gang Wars (gangwars.zip). If this answer isn't enough, I can look into the problem if you can direct me to a certain part of a video where this audio issue is the most obvious.
Is it ever confirmed that Jackie is a man or a woman? I used to think a woman when I was growing up because Jackie is a girls name, however it could be a Jackie Chan martial art master style ripoff, with both players having the same male noises and Jackie not having the stereotypical woman look that many scrolling beatemups had around this time, I'd say Jackie is a man. The only thing though that bugs me is the female looking picture on the rolling demo which looks nothing like ingame Jackie.

Because those BASTARDS at CRAPCOM were always showing all of the other companies that "they can't make beat em ups no matter how hard they tried".

Jackie is a man, even the end demo of both Jackie and Mike don't look like their in-game models. It doesn't matter at all.
